you can get rooms from @ £16 a night in pattaya see the sunbeam hotel its right in the centre & bangkok see the bel-air princess hotel it also is a great location .I have stayed in both hotels 4 times in last 3 years & going again in september
not been to chaing mai yet sorry

Depends on how much you want to spend and what type of accommodation you want. These places have accommodation from cockroach-infested non-aircond shared bunk backpackers places to 5 star full service hotels.
If you are going to Thailand by Feb then you better start booking right now!

HERE'S a great spot to stay in patong on phuket island, if you play pool or ten pin bowling even better you may get on the team for a better rate. 15 mins to bangla road 400 bars restaurants etc.5 mins from the sea.

You should go through a Travel agent like TUI, If you book tour package, then you will enjoy your trip without any hassles as They will take the responsibility of everything from flight tickets to accommodation and sightseeing.
