I use the drippings (taking out the small pieces) and water from your vegetables that are cooking. Mix together in a pot and bring to a slow boil and add one bay leaf and one garlic clove turn down and let simmer for 5 minutes. Take out bay leaf and garlic clove and in a small bowl mix gravy browning (bistol) and cold water till it is smooth and no lumps. Slowly add to your drippings water combo that is again at a slow boil. Keep stirring with a wire whisk. Add more gravy browning as needed for thickness. They key to a good gravy is not to use flour. Use gravy browning or plain corn starch you will have a lump free gravy!!!!

INGREDIENTS
2 cups chicken stock
3 tablespoons cornstarch
1 teaspoon poultry seasoning
DIRECTIONS
Bring chicken stock to a boil. Dissolve cornstarch in a small amount of cold water and add to chicken stock. Season to taste with poultry seasoning and cook until thickened. Serve!

INGREDIENTS
1/2 cup all-purpose flour
1 cup water, or as needed
1 (3 pound) roasted chicken (drippings from chicken)
DIRECTIONS
Add water to the chicken drippings to make about 1 1/2 cups of liquid in the bottom of the roaster.
Whisk water into the flour until it is thick, but not pasty. Whisk the flour/water mixture into the drippings, and put the roaster on the stove over medium heat. Stir constantly until mixture is thickened and bubbly. Add salt and pepper to taste.

After roasting the chicken, remove chicken from roaster and heat roaster over medium heat until the drippings are bubbling and sizzling, scrape with wooden spoon, and add 3-4 Tbsp of flour. Continue to scrape with wooden spoon, mixing the flour with the drippings, until all the flour has been incorporated, about 2 minutes. Slowly add 1 box of chicken broth, stirring constantly, until gravy becomes smooth, then add salt and pepper to taste.

Creamy Chicken Gravy Low Carb Recipe
Ingredients:
Pan drippings from fried/sauteed chicken
1 tablespoon potato starch
1/8 teaspoon paprika
1/2 cup chicken broth
1/2 cup heavy cream
Salt and pepper to taste
Directions:
Scrape pan drippings from skillet after draining off any excess of oil.
Pour broth in skillet set to simmer, stir and allow to reduce.
Add thickener to cream in separate bowl and mix well.
Pour slowly into skillet, stirring constantly and add paprika, salt and pepper to taste.
When thickened to desired consistency, pour from skillet into gravy boat and serve. (If mixture becomes too thick, simply thin with a bit of water and stir till smooth.)
Recipe makes four servings; five carbohydrates per serving.

I would use chicken drippings whisked with flour and then add my own home made chicken stock to that (you can make this by saving your chicken bones that no one ate from and cooking that with things like onion, carrot, and celery until the flavor exudes from the bones). Don't forget to season your gravy. If you don't use flour, mix corn starch with some cold water.
You can freeze bones until you need them.
You can also freeze the stock you make, preparing it when you have time and packing it in freezer bags when cool.

CHICKEN WITH THE GRAVY"
-2 lbs. chick wings or legs or combo
-Flour to coat
-Salt & pepper to taste
-4 tbsp. thyme (adjust to taste)
-2 tbsp. butter
-Water to cover chicken
-Gravy Master
-2 med. onion
-1 or 2 lbs. of fuscilli macaroni
Wash and pat chicken then coat with flour. In skillet, place butter and brown chicken on both sides. Add chopped onion and enough water so as not to burn. Take browned chicken parts and place in double boiler. Continue with the chicken until all is browned.
Add a little of the thyme to skillet. When all the chicken is browned and placed in double boiler, add enough water and thyme to cover chicken. Cook fusilli macaroni as per box instructions and serve "Chicken with the Gravy over it."
