2-3 tbsp. canola oil
1/2 can chicken broth
2 hard boiled eggs
2 to 3 crushed garlic cloves
1/4 c. green onions - sliced
2 c. fresh or frozen mixed vegetables in bite-sized pieces - including celery, carrots, green beans and cabbage
1/4 c. diced onions
1/2 lb. pork
1 8 oz. package thin Asian rice noodles
salt
1/2 c. baby shrimp
3 tbsp. soy sauce
Instructions
STEP 1: Cut pork into thin slices - about 1-inch long and 1/8-inch thick. STEP 2: Soak noodles in hot tap water for about 5 minutes and drain (or soften noodles according to package directions). STEP 3: Heat oil in a wok or large skillet over medium-high heat. STEP 4: Brown pork, onions and garlic for 2 minutes. STEP 5: Add soy sauce and sauté until pork is completely cooked. STEP 6: Add shrimp and vegetables. Stir-fry for 1 to 2 minutes. STEP 7: Remove from heat and set aside half of the pork-vegetable mixture. STEP 8: Stir noodles into the other half of the pork-vegetable mixture and add 1/2 can of chicken broth. Mix well. STEP 9: Add the rest of the vegetable-pork mixture and mix well. STEP 10: Place pansit on a large platter. STEP 11: Top with sliced hard-boiled eggs and sprinkle with green onions. Tips & Warnings

PANSIT (BIHON)
1/4 c. oil
1 c. shrimp
2 cloves garlic, minced
1 sm. cabbage, shredded
3/4 lb. bean sprouts
1 lg. carrot, sliced
1 lg. onion, sliced
2 bundles or 1 pkg. bihon (noodles)
2 pieces Chinese sausage, sliced
1 sm. bunch celery, sliced
1 tsp. salt
1/2 c. chicken broth
2 tbsp. soy sauce
1 c. sliced pork
In a wok or a large frying pan, lightly saute Chinese sausage for 2-3 minutes. Remove sausage from pan and drain on paper towels. Add oil and heat, adding garlic and pork. Stir fry 5 minutes or until pork is cooked; then add shrimp and cook another 2-3 minutes. Add cabbage, carrot, celery, onion and bean sprouts. Stir fry 2-3 minutes. Add broth and simmer until vegetables are about half cooked.
Soak Bihon approximately 30 minutes or until soft. Drain well. In a very large bowl toss Bihon with vegetables. Season with soy sauce and salt. Garnish with chopped green onions. Serve hot with lemon.
