SCANDINAVIAN RICE PUDDING:
2 cups milk
1/2 cup rice, uncooked (River Rice)
1/2 cup light or heavy cream
1 teaspoon vanilla extract
1/8 teaspoon salt
1/3 cup sugar
2 Tablespoons butter
In the top of a double boiler heat milk; stir in rice, cover and cook over boiling water stirring occasionally as the mixture thickens. Add in additional milk if necessary, until the rice is tender. About 1 to 1 1/2 hours. Stir in cream, vanilla, salt, sugar and butter. Remove from heat and allow to stand over hot water until ready to serve. Mixture will thicken as it stands. Makes 3 cups.

Caribbean Coconut Rice Pudding

1/2 cup Jasmine Rice
2 Cups Whole Milk *
2 Cups Coconut milk*
1/3 cup sugar
2 Tblsp. raisins
1/2 tsp Vanilla extract

Put coconut milk and whole milk into a deep pot. Add rice.
Bring to a boil and cook slowly with the lid on for One Hour, or
until the rice is cooked thoroughly and the milk has thickened
to a pudding consistency.

Add sugar and vanilla extract. Cook about another 5 minutes.
Distribute pudding into 4 serving dishes, garnish with raisins and coconut
flakes. Chill one hour before serving.

* I use a can of Evaporated Milk, fat free. The can is 12 ounces; I add
4 ounces of water to make it 2 Cups.

The coconut milk often times comes in a 13.5 ounce can, add 3 ounces
of water to make it 2 cups (16 ounces). Coconut milk is rich, that 3 ounces
of water won't put a dent in it.

Sometimes if I've got left over rice and feel like something sweet I just put the rice in a saucepan with some milk to cover and sugar to taste, then let it simmer until the mixture is thick and then enjoy.

This is simple & quick
Jello brand Vanilla pudding (cooking kind)
Boil in a bag rice.
Cook each separatley according to Directions.
Mix together!

Rice milk sugar to your own taste.
