The zest is from the peel of citrus (lime, lemon, orange), but is just the colored part. It has oils in it that give you an intense non-sweet flavor.
I've never seen it for sale fresh, and the dried versions are pretty useless. However it is really easy to do yourself if you have a "microplane." It works like a charm and is good for other uses, like hard cheese. ...

That means you grate the whole lemon or lime, preferably with a microplane, or some other grater that grates finely. You only grate the colored part. If you grate the white part, it will be very bitter, no one uses the white part. It's called the pith, and it's disgusting. So just once or twice over the same area at a time should do it, and then do that until you've got most of the colored zest off the fruit.

Grated lime zest is not something you will find on store shelves. You take a fresh lime and grate the peel (the green part). That is the grated lime zest. The same thing would apply for lemon zest, only with a lemon.

all you do is buy limes and grate the skin of it only not the white part as it is bitter. orange and lemon zest is done the same way.
Invest in a micro plane they are wonder full.
they are hand held graters most stores that carry kitchen gadgets have them. I have 2 on for hard type foods and 1 for cheeses love em!

You would use the smallest holes of your box-grater to zest a lime (or lemon), if you can't obtain the microplane that's already been mentioned.
You should be able to find lime peel in the spice section of your grocery store - I believe that Spice Island might make it, as I have some of their orange peel.

lime zest is the outside of the lime. scrap the green off but as with lemon zest try to avoid the white part. that is not the same as the green part. you need a small grater. it may take you a bit with out getting it to thick it should be a fine "sanddust" texture

easy-peasy, lime squeezy! lime zest (orange & lemon, too) is the outside "1/2" of the skin. you can't buy it just make it. you can buy a zester for a few dollars at any kitchen shop and this tool will scrape the fruit, making zest. if you don't want to bother, just use a staandard grater, but gently. you don't want the pith (the white part of citrus fruit skin). nobody likes it when you take the pith. thorry.
