Beef Jerky
Do not rush this, take your time, it's worth the wait.
Ingredients
1 Flank steak
1 Clove garlic, minced
1/2 c Honey
1 Pinch pepper
4 tb Lemon juice
1/2 c Soy sauce
1 Pinch salt
Instructions
Put steak in freezer for about half an hour, just until firm. Slice steak across grain, about 1/4-inch thick. Combine remaining ingredients and marinate steak strips in this for at least 2 hours. Place slices on rack in pan and dry in oven at 150 degrees, 12 hours.

"Beef Jerky" - 1/2 pound
1 lb. boneless beef round steak
1 1/2 tsp. garlic salt
1/2 tsp. pepper
1) Freeze meat 1 hour to firm (makes slicing easier); trim and discard fat from steak. Cut steak into very thin slices.
2) Place strips in single layer on wire rack in jelly-roll pan. Sprinkle with garlic salt and pepper.
3) Bake at 200* about 6 hours until beef is dry. Cool; store in covered container in refrigerator.

I make lots of venison jerky but i use a smoker. I use only salt but you can add any spice you want. marinate in real salty water for a couple of days then when you're ready to smoke take it out of the salt water and soak in plain water for an hour or so. you can make a nice smoker out of a trash can and an old fridge rack. cut some holes in the lid to let the smoke out. use charcoal at first until the wood is burning good. I like alittle flame and not alot of smoke but thats to my taste. You can buy hickory chips and chunks most anywhere. I use maple myself cause its all over the place here and gives a real mellow taste. Oh, yeah. cut your meat in half inch thick by one inch and whatever lenght you want.

Heres two recipes one not using a dehydrator and one using one.
BEEF JERKY
INGREDIENTS
4 pounds round steak
4 tablespoons onion powder
1 1/3 teaspoons black pepper
1 1/3 teaspoons garlic powder
2 pinches salt
1 teaspoon dry Italian-style salad dressing mix
1 cup Worcestershire sauce
1 cup soy sauce
1 teaspoon hot pepper sauce
DIRECTIONS
Cut meat into strips no thicker than 1/4 inch. In a large bowl, mix together onion powder, pepper, garlic powder, salt and Italian seasoning. Stir in Worcestershire sauce, soy sauce and pepper sauce. Place meat into a container, and combine with marinade. Cover, and refrigerate 24 hours.
Place oven rack on the highest level. Place aluminum foil on bottom of oven to catch drips. Preheat oven to 150 degrees F (65 degrees C).
Insert round toothpicks through the tops of the strips of meat, and hang them from the oven rack. Bake in preheated oven for 4 hours, or until dried to desired consistency.
JERKY LOVERS JERKY
INGREDIENTS
1 tablespoon onion powder
1 tablespoon garlic powder
2 teaspoons cracked black pepper, or to taste
1 pound lean beef sirloin tip, sliced into 1/8 inch strips
1/2 cup brown sugar
2/3 cup soy sauce
1/4 cup teriyaki sauce
1/4 cup Worcestershire sauce
1/3 cup balsamic vinegar
5 tablespoons liquid smoke flavoring
1/2 cup pineapple juice
1 teaspoon red pepper flakes, or to taste
DIRECTIONS
In a small bowl or cup, mix together the onion powder, garlic powder, and some cracked black pepper. Season the meat lightly, using only part of the mixture. Reserve the remaining spices. Place into an airtight plastic container or bowl, and refrigerate.
In a saucepan over medium heat, mix together the brown sugar, soy sauce, teriyaki sauce, Worcestershire sauce, balsamic vinegar, liquid smoke flavoring and pineapple juice. Heat until the brown sugar has completely dissolved. Pour over the meat, and mix by hand to coat really well. Seal the bowl, and refrigerate for at least 3 hours to marinate.
Arrange the beef strips on the rack of a dehydrator, and sprinkle with a little bit more of the spice mixture and red pepper flakes if using. Dry for 5 hours, or to your desired dryness.

You'll need to invest in a dehydrating machine. You can purchase one of these for about 8o dollars or less at Kmart, walmart or costco. Then you'll need to purchase beef slabs or thin beef steaks and find a recipe that you enjoy.

Best bet is to get a smoker, then you can hickory smoke the meat. All the smokers come with recipes and wood chip suggestions.
