This is quick.I make a box of velveeta shells and cheese and add a half pound of cooked hamburger.Then i put this in a cassarole dish and add 2 cups of mild pace salsa.then i cover the whole thing with 3 cups of shredded sharp chedder cheese.Bake at 350 for about 40 mins.Enjoy,i add sour cream on top for an extra.

BREAKFAST - EGGS BENEDIT
This is a bit of a heart stopper, but delicious: This is a recipe for two:

INGREDIENTS
Bacon rashers for two
English Muffins - split (one each)
Spinich

For Hollandaise Sauce
2 x egg yolks (large)
Juice of half to whole lemon (depending on how much juice they have) about quarter of a cup
Butter - about 50 grams
Salt & Pepper
4 eggs - for poaching.

To make the Hollandaise
Put egg yolks in to a mixing bowl, and add a tiny pinch of salt, and lots of cracked black pepper and whisk for about 1 minute.

Put small pot on stove and add the lemon juice. When lemon juice starts simmering, pour it slowly in to the egg mixture, whisking all the time.

In the same (now empty) pot, but the butter on a very low heat until it melts. Once melted, pour very slowly in to the egg/lemon juice concoction and whisk at the same time.

Whisk the mixture until it becomes thick. Usually around 1 minute.

Now cook the bacon until crispy (or how you like it), and wilt the spinach. Poach the four eggs. Toast the halves of the English muffins.

Put muffins on a plate, bacon on top, then spinach, then poached eggs and top with Hollandaise sauce and cracked black pepper.

DIVINE!

pull out a soft tortilla , a can of tuna, some mayo, and a stick of celery. drain the tuna, mince the celery and put in bowl. Mix 1 teaspoon of mayo. spread out on tortilla and roll up. You may want lettuce and cheese too. Enjoy.
