It has been shown that trans-fat causes heart problems; heart problems lead to hospitalizations, and hospitalizations result in loss of work hours, lower tax revenues, and the necessity of paying for care for people who lack insurance. THAT is why the government cares about trans-fats in your diet.

I really dont know if they care! But they should. Public health is very important. The sicker we are or less healthy the more we are a drain on our health system. Rates will continue to go up even hight for medical care. Here is a little background info on trans fat anyway.

According to the Dutch research, trans fat in the diet can cause even more health problems than saturated fats. Using a "cross over" design in which healthy subjects ate a diet containing trans fat or saturated fat for 4 weeks and then switched to the opposite diet for 4 weeks, several cardiovascular events were affected. When the subjects ate the trans diet their blood vessels dilated 29% less efficiently, and blood levels of HDL or "good cholesterol" was lowered by 20% compared to when subjects ate the diet rich in saturated fats. Trans fat has also been shown in other studies to raise the levels of LDL or "bad cholesterol" and may also increase total serum cholesterol.

I agree with you, but American hypochondria has resulted in a lot of government paid health care, and the cost for the complications of trans-fat (in obesity and, especially, in cancer) is billions and billions.

The government is interfering because it is paying so much. It's the same reason that got involved in cigarette smoking.
