Chicken Pot Pie Recipe courtesy Debbie Schneweis 2002 for FoodNetwork.com's Perfect Pie Championship Cook-Off Competition


A side order of country green beans or salad makes for a hearty meal.


Cornbread Topping:
1 cup yellow cornmeal
1/3 cup flour
1 1/2 teaspoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons vegetable oil
3/4 cup buttermilk
1 egg
1/2 cup butter, melted
Filling:
2 1/2 cups cooked chicken breast, cut into bite-sized pieces
1/4 cup yellow onion, chopped
1/2 cup celery, thinly sliced
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 can cream of chicken soup
1 3/4 cup chicken broth
2 tablespoons butter


For crust, mix cornmeal, flour, baking powder, sugar, salt, baking soda, oil, buttermilk, and egg in mixing bowl until smooth. Pour into greased 8-inch x 8-inch baking pan and bake at 375 degrees F for 20 to 25 minutes until done.
Remove from oven and let cool completely. When cool crumble corn bread and place 3 cups of cornbread crumbs in mixing bowl.

Add 1/2 cup melted butter to crumbs and mix well, set aside.

In a saucepan on medium low heat, melt butter and saute onions and celery until transparent, stirring occasionally. Add chicken broth, cream of chicken soup, salt, and pepper. Stir until well blended and soup is incorporated. Add chicken, stir and blend until mixture reaches a low simmer. Cook for 5 minutes, remove from heat.

Place chicken mixture in buttered casserole dish 2 1/2 quart, or individual casserole dishes (about four). Spoon cornbread crumb topping on top of chicken mixture, do not stir in chicken filling. Place baking dish in preheated oven at 350 degrees F for 35 to 40 minutes. The crumbs will turn a golden yellow.

Hookin ya Up Chicken Pot Pie

Ingredients
(6 pie)

4 Boneless chicken breasts
1 Can cream chicken soup
1 Can cream celery soup
1 c Swanson's chicken broth
1 Stick margarine; melted
1 c Milk
1 Box frzn peas & carrots;
1 c SELF-RISING flour
1 ts Baking powder

Instructions

Spray baking dish well with Pam. Remove skin and cut each chicken breast into several pieces. Place on bottom of baking dish. Mix soups and broth and pour over chicken. Defrost frozen peas and carrots in microwave. Scatter over top of chicken pieces. Mix milk and melted margarine. Add a little bit of flour and baking powder at a time to the milk and margarine. (Whisk smooth while adding.) Pour over soup layer. Bake at 350 degrees for 1 hour. Crust will brown.

take pillsbury roll out dough (the one in the can) and get a pie tin

cover the bottom of the pan with the dough, add cooked chicken, and swanson chicken gravy. I also add slightly cooked carrots, celery and onion and a little pepper. Then use the rest of the dough to place on top of the pie tin.

If you are brave and know how to make it from scratch , I recomed making it using your Thanx giving left overs.
I buy "filo dough "that comes in sheets", and a HUGE pie pan ,which I lubricate to keepto keep dough from sticking , put what ever you choose in side , cover with another sheet of dough , cut the edges with siccors,and crimp the edges , as well as poke hole in the top for it to breath. Now , what i do is freeze it till xmas ,pop it in the oven ,and turkey pot pie for xmas!

If you want something really easy to throw together, I would really recommend the Bisquick recipe on the box, except substitute the cream of chicken with cream of mushroom soup instead. Every time I make it, I never get to eat it, it's gone lickety split!!

a real easry recipe is to buy already made pie crust, lay it in the bottom of dish, then take cans of mixed vegetables, package of cooked chicken breast, cream of chicken and cream of mushroom soup mix together, pour into crust top with other crust bake at 350 until brown super easy and fast
