Depending what cut you have and if you saute or fry, you're talking maybe 20 seconds, any longer and, remember the eraser on the end of your pencil?

There are 2 methods to cooking squid, short and quick or long and slow, if you making as said calamari, just dip it inot seasoned flour and fry for 2 minutes, things like sauces and other dishes you have to treat it like shank meat or stewing chickens.

The greeks and italians make sauces or cassorles with larger squid or cuttlefish where they are stewed in tomato sauces with vegetables and this can take an hour or 2.

I worked in the restaurant trade for 20 yrs and have made some very tasty dishes with squid, I recommend marinating your calamari in a buttermilk and Italian dressing combo, and then just dip them in flour with salt, pepper, garlic powder and parsley (dried) and a dash of cayenne pepper for zing.
