we are newbie rv'rs and want to travel lite. interested in dried egg and dried foods recipes. help would be appreciated.

Welcome to the Road! All your stuff you have to eat is just as before, it just need to be re-hydrated. You can make quiche, scrambled eggs, omlets, just like when you where house bond. Once you get the hang of re-hydrating, meaning you have to plan a bit more ahead, you got'er licked. Good Luck, Happy Roads

Hmmmm....I don't believe I've ever HAD a dry egg! If I were you I'd invest in a dehydrator. You can have just about EVERYTHING dried that way! You're gonna have a fridge right? My parents are RV'rs and they pretty much stock their fridge and cabinets fairly similar to the way they do at home. They have several standard staples as well, peanut butter and jelly, bread, milk, eggs, dry mixes and then when they get to wherever they're going they run once to the store and stock up on more perishables to last them until they move on. That way they aren't overstocked and can eat their food and leftovers prior to moving to the next site, but still have their staples on hand. I think if you want a lot of dried food a dehydrator would be a great option though!

Dried/powdered eggs are great for baking or anything you need to add eggs to like Quiche, or perhaps a fritata and the like.
