To make perfect eggs each and every time:

Place the fresh eggs in a saucepan and cover with cold water. Place on the stove and bring to a full-rolling boil. Cover and turn off the heat. Leave them covered for 10 minutes. Do not lift the cover to peek. Then immediately drain the hot water and replace with cold water. Shell the eggs under cold running water from the tap.

As for ideas on what to add:

Traditional: Add Sweet pickle relish, grated white onion, thinly sliced celery, chopped hard-boiled eggs and mayo.

Hawaiian: Add diced red onion, raisins, and mayo

Indian: Add green seedless whole grapes, pecan nuts or walnuts, grated onion, mayo, and a little hot curry powder.

French: Chopped hard-boiled eggs, a little dried tarragon, minced shallots, thinly sliced celery, and mayo.

Holiday Special: Chopped hard-boiled eggs,
dried cranberries, nuts, parsley, and mayo.

Serve all on beds of greens with sliced or quartered tomatoes. Add toast if desired. Enjoy!

Chicken salad - how about some noodles to accompany the salad, dinner rolls and a glass of white wine?

As far as boiling eggs - I learned this trick. Boil the eggs for 2 full minutes and then turn the heat off and let them sit in the boiling hot water for another couple of minutes and voila! You will have hard boiled eggs.

As strange as it sounds, mango and chicken are a really good combination. Slice up some ripe mango cheeks and add them to the salad just before serving.

A few other suggestions:

avocado;
crispy bacon;
halved cherry tomatoes.

I hope you have a nice dinner!

Hard boiled eggs must boil for 5 minutes. 3 minutes is for soft yolk.
You could add nuts (cashews), grapes, small macaroni, green or red peppers, etc.
