I have a roasted chicken I cut up.. Also my oven is broken so is there a way of getting around this? Thanks

I ate in Mexico a lot when I lived close to the border and one of my most favorite recipes for chicken enchiladas requires almost no cooking. You already have some roasted chicken, so just take three small warmed corn tortillas. Yes, you can use one or two flour tortillas if you prefer. Warm them until they are pliable enough to be rolled up and simply put the chicken in them add some avocado on top of the chicken that has been mashed with a little salt. Roll them up and take some sour cream to which you've added a little hot sauce and mixed up well. Place a dollop of the sour cream mixture on top of the rolled enchiladas. Enjoy!

Do you have enchilada sauce, corn tortillas, onion (because I love onions), cheese and whatnot (rice, beans, sour cream, garnish etc.)?

All is not lost because your oven does not work. You can make the enchiladas rolled or flat. My preference is flat because the tortillas tend to crack when handled (and rolled) and all of the filling comes out and it just kills me!

Okay so, make your sauce or heat it up. You've got the cooked chicken -- but it may be dry... so I like to add the chicken to the sauce. I use a slotted spoon to pull the chicken out of the sauce to use as my filling. Heat the tortillas in a pan with a small amount of cooking oil (softens them up and keeps them pliable). Either prepare to roll or put down a tortilla flat, on a plate. Add your filling and onions and roll. Or, just lay down another tortilla flat on top of the filling. Put the sauce over the top and add other toppings (garnish with lettuce, onion and tomato) or sour cream, etc. My favorite restaurants in New Mexico made their enchiladas flat -- it is easier on the cook, too. The recipes I have need an oven. The microwave doesn't do enchiladas or anything else any favors.

if you have a microwave this one will work. take same amount of chicken as montery jack shredded cheese and 1 minced onion. mix this in a big bowl. roll mixture up in corn (or flour) tortillas (use about 1/3 cup per tortilla). arrange in a glass baking dish with half can cream of mushroom soup smeared in the bottom. after enchiladas are all arranged in the dish smear the rest of the soup on the top. add chooped green chillis (if ya like) heat in microwave on 50% power for 10 minutes and check center for heat. great thing is everything is already cooked so your just heating it through. ENJOY!!
