In a recent question, I asked about whether cane juice was okay for a person on a sugar-restricted diet to eat. My friend is on a sugar-restricted diet, but I am not sure of the details. I don't know whether she's just not allowed to eat sucrose, or whether fructose is out too. Could you tell me more about the specific composition of cane juice?

The Wikipedia article on sugarcane, for example, reports that cane juice must be pH adjusted with lime to prevent the conversion of sucrose to fructose and glucose. If the cane juice is not fixed, how much sucrose will be left?

cane juice when cooked down turns to sugar. in other words when you cook all the liquid out of cane juice it makes sugar like the dixie crystal you get at krogers. and that is the kind that diabetics are not allowed to have.

contains cane sugar, probably from sugarland, tx.
