You can play with just two players, but you can play with any number up to 11. Generally 10 is considered the maximum however. The number of players will affect the strategy you need to use.

2 is the minimum and 10 players per table is the norm, but the maximum number of players is unlimited when playing in multi-table tournaments.

actually 2-21 and still have proper burn and flop- thats 42 cards delt to players 5 for the board and you can still have 5 burn cards!
