Pink and black sound pretty interesting for a spring western wedding but i would definitely play with it. Find flowers in varying pink shades so as not to overwhelm the black. Make your invitations and wedding programs match with black designs and pink lettering use a white background for balance.
People may try to give you a hard time about using black but if black and pink is what you want then stand by your choice. It is after all your wedding!

pink & black seems 2 b too harsh 4 a wedding theme.
what about pink & silver?
