Mackerel flappers are best when using fresh mackerel. Take a knife, and starting at the tail, run the blade along the backbone until you get to the back of the head, repeat this for the other side. Then break the backbone and remove, leaving you with the head and two fillets still attached. It's an excellent bait for conger and ling. The bait, as the name suggests, provides an enticing 'flapping' action in the water due to the removal of the backbone and ribs. Just use a large hook and hook it in one eye and out through the other.

Mackeral flapper? Hmm. I heard a mackeral SNAPPER is a catholic. Something about eating fish on Friday or somesuch.

None of the catholics I know - and that's a bunch - would be the least bit offended by the term.

Whole mackerel can be thawed, have the backbone removed, but leaving the fillets attached to the head. This is called a “flapper” bait and is excellent for taking big ling, turbot, conger, cod and rays.
