A great recipe I tried.....make wedges out of your potatoes if they are russets...set them aside....In a bowl mix mayo, garlic powder, salt, pepper, and a little hot sauce.....coat each potato wedge with the mayo mixture and bread them with a little cornbread coating (you can get it at the grocery store near the bread crumbs) and then bake them for about 40-45 minutes. They are really yummy, especially if you save some of that mayo mixture for dunking.

Other than potatoe soup, fries and mashed potatoe you can make Scalloped potatoes.
I love this one, it's different from regular mashed potatoe!

SCALLOPED POTATOES

3 tablespoons butter
1 small onion, minced
3 tablespoons all-purpose flour
1 teaspoon salt
1 1/2 cups milk
1/4 pound sharp cheddar cheese, shredded
5 medium potato, peeled and sliced
1/4 teaspoon paprika

Preheat oven to 375 F. In 2-quart saucepan over medium heat, in hot butter, cook onion until tender, about 5 minutes. Stir in flour and salt until blended; cook 1 minute. Gradually stir in milk and cook, stirring constantly, until mixture thickens slightly. Remove saucepan from hear; stir in 1/4 cup shredded cheese. In shallow 2-quart casserole, arrange half of the potato slices; pour half of the sauce on top; sprinkle with half of remaining cheese; repeat. Sprinkle with paprika. Bake, covered 45 minutes. Uncover and bake 15 minutes longer or until potatoes are tender. Makes 6 accompaniment servings.

Anothe reasy recope is:

Just slice the potatoes thin, and place in a large bowl. Drizzle olive oil and season with salt, pepper, and dried dill. Mix well till the dressing covers all potato slices. Spead on a cookie sheet and bake in the over at 400'. It should be ready after half an hour or if you like it crespy you can can let it stay longer.

This is a very healthy and yummy recipe.

If you like baked potatoes...

Clean them then coat skin with olive oil, salt and sugar. Wrap in foil then poke some holes with a fork. Yum! Healthy and delicious! You'll never go back to the plain way!
