I have a recipe for chicken thighs rolled up with feta and sun-dried tomatoes. While I think it sounds yummy, my fiance thinks it sounds gross? What more "normal" ingredients would you put in a stuffed chicken?

In response to answers... 1. I am not looking for a stuffing recipe. I am looking for stuff to put inside chicken. :)
2. For the girl that asked, you take the thigh meat (off the bone) or buy it that way and proceed as you would your chicken breast. You do know at one time there was a bone in that breast, too? But great ideas for stuff!

How do you stuff chicken thighs?? There is a thigh bone in there. If you want to roll chicken around something I suggest boneless skinless breasts. Pound them out til they are thin and put ham green onions and pepper jack cheese or feta or any kind of cheese in them and roll them up and bake. Yum

Small whole onion inside a pepper?
Stuffing? Black olives in a tomato?
Mushrooms & parmesan?

Whatever you stuff it with, be sure the chicken is thoroughly cooked.

I make Beer Can Chicken all the time and usually put an can of beer in one end of the chicken and either and onion, potato, or an orange in the other end. Then I season it with either orange juice and a few random spices or with italian seasonings and italian dressing.
