Honestly, it was something I always wanted to try and I didn't think it tasted of anything. It's not a strong taste like turnips or parsnips. I think it serves the purpose of 'bulking up' meals, such as soups.

i do think it depends on how mature it is, it can be a little sweet, but butternut squash and cumin soup is nice

It tastes mildly of peanut butter - you know, that dryish kinda taste? It's not sweet like pumpkin or sweet potato. It's got a smooth taste too. I like!

It's really good. I like mine with brown sugar, butter and salt and pepper. It's flavor is so close to pumpkin that it is often used in the canned pumpkin pie filling that you buy at the store.
