I made a great non-alcoholic punch out of the following - you can make it the day before too. Ginger mint punch
Make the following strong teas first
Cut 2 oz ginger into small slices and simmer boil it in 2 cups water for 5 minutes.
Cut one cup of mint leaves up and put them into 2 cups boiling water and leave it for 10minutes.
Make some orange juice drink (real orange juice, not Tang) and half as much lemon juice drink. (I used PLJ and sugar and water)
On the day of the party, add several fizzy drinks - Tizer, Sprite, Canada dry, or whatever (NOT coke or Pepsi) and there is your very tasty ginger mint punch.

I have a recipe for a KILLER cake. Its called better than sex cake.
You prepare a regular box cake (devils food). Let it cool for ten minutes after it is done and poke holes in it with the end of a pencil or something of that width. Mix half a can of sweetened condensed milk and half a can of caramel ice cream topping and pour it over the cake. Get a big candy bar from the store I use symphony with toffee. Break it up and cover the cake with it. Finish with whipped cream as frosting.
You could also use some left over caramel topping and drizzle it over the cake. Also I save a bit of candy bar and put it over the whipped cream.

If you do a Mexican buffet as suggested above you could serve non-alcoholic pina coladas and margaritas by blending non-alcoholic mixers with ice. You could have a taco bar with chicken, beef, and fried fish, flour & corn tortillas, and assorted taco fixings. Add in rice, beans, and tortilla chips for sides, with 3 or 4 salsas and you should be set.
