When the apples turn brown it's not only unappealing to the eye but the fruit is losing tyrosinase during oxidation. Tyrosinase is important because it helps produce melanin for our skin.
To reduce oxidation you can squeeze or brush a small amount of lemon or lime juice over the white fleshy part of the fruit. Don't use too much or else your apples will taste like lemons! Store in an air tight container or baggie and always keep the fruit cool (refrigerate or use ice packs in the lunch box) until it's time to eat.

If it will be hours, better off not slicing the apples. Pick a smaller whole apple or dehydrated apple snacks. Lemon juice does work on sliced apples, but not for an extended length of time.

Like other people have said, you brush them with lemon or orange juice on the cut parts(you can use a paper towel that's wet with it, whatever you want, I've done this with orange juice and it worked on a candy covered apple). Really, you can use anything with vitamin c, I'm not sure how it works scientifically, but the acidity stops the brown.

You can use lemon juice to brush on them. They also sell a powder called Fruit Fresh which will do the same thing. It does not leave the lemony taste on the apples or peaches or whatever fruit you are preparing.

I have found that the ziploc baggies with "freshseal" work rather well. I haven't used them with apples but it kept a head of lettuce fresh for 2 weeks which is unheard of! Good luck!!
