Here's How:
Slice onions into 1/4-inch wide rings.
Heat butter or combination of butter and oil in heavy skillet.
Add onions and a small amount of sugar (optional) and slowly cook over medium heat.
Cook until onions are caramel colored, stirring often, 30 to 40 minutes.
For more flavor, add a touch of vinegar at the end of cooking, stirring to deglaze the pan.

Tips:
Large, mild-flavored onions work best.
Carmelized onions can be frozen in an airtight container up to three months.
To remove onion smell from hands, wash with soap and then rub hands against a chrome faucet.

There are two different ways that I know of.

For the first you will need:
onions (sliced)
a little butter and/or olive oil
pinch of sugar (optional)

Saute the ingredients over medium heat, stirring often, for about 30 minutes or until they reach a dark golden brown color.

For the second method, you only need onions, water and sherry. You will use high heat and add just a little water to the pan of sliced onions. Cover it and let the water evaporate. Stir often, scraping the carmleinzing sugars from the bottom of the skillet to mix with the onions. Use some sherry after the onions have browned to deglaze.

Heat 1/2 cup of the olive oil in a large heavy skillet over medium heat. Add the onion, stir to coat with the oil, reduce the heat to medium-low, cover, and cook, stirring occasionally, until the onions are soft and have just begun to color, about 30 minutes. Remove the cover, sprinkle with salt and pepper to taste, increase the heat to medium and cook uncovered, stirring frequently, until the onion is deep golden and caramelized, about 25 minutes.

You can use a little butter or olive oil (even mixed) if you don't have a nonstick pan.
At risk of being beheaded by the health police, though, I will tell you that cooking with lard imparts a special flavor to Mexican food you can't get any other way.
But I think as long as the use of lard is only occasional, there really shouldn't be any health worry.

You can use Grenadine. The sugar in Grenadine will carmalize the onions as you cook.

just cut up your onions and put a little bit of oil in the pan and cook them on med heat.

nothing, they caramelize themselves! Just cut up your onions and put them in a skillet (maybe a little Pam or water to prevent sticking) and let them do on medium until they are brown and sweet.

i take the onions and peppers and put them in with butter (or margarine) and let them simmer for about 15-20 minutes on low-medium heat (with a lid)
