So my Grandmother in South Dakota used to make something called scalped corn. Which I think is an american derivitive for "escalloped corn". Sure I've seen versions but I am wondering how it is made....... it had cans of cream corn, maybe some whole corn, milk and saltine crackers. I'm thinking there is someone who knows how to make it!

Scalloped Corn
Yield: 4 Servings

Ingredients

1 (17 oz.) can cream style
-corn
1/2 c milk
1 egg
1/2 ts onion salt
1/4 c corn flake crumbs
1/4 c shredded cheddar cheese

Instructions

Combine corn, milk, egg and onion salt in 1 quart casserole. Combine
cornflake crumbs and cheese; spread over the corn mixture. Cook in
microwave on cookmatic level 5 (slo cook) for 15-18 minutes or until
knife inserted near center comes out clean. You may wish to turn
dish halfway through cooking time.



Supreme Scalloped Corn
Yield: 1 Servings

Ingredients

1 cn (1 pound) cream style corn
-(about 2; cups)
1 c milk
1 egg, beaten
1 c crushed cracker crumbs
1/4 c minced onion
3 tb chopped pimento (optional)
3/4 ts salt
1/2 c buttered cracker crumbs (we
-use rit; z)

Instructions

Heat corn and milk together, gradually stir in the egg. Add the next 4
ingredients and a dash of pepper; mix well. Pour into a greased 8 inch
round casserole dish. Sprinkle with buttered cracker crumbs. Bake at 350
degrees for 20 minutes.

Here is my grandmother's recipe:
1 can cream style corn
1can whole kernel corn
1egg
1small box jiffy corn bread mix
4 oz of sour cream

Mix all ingredients in a 2 quart casserole dish bake for hour and 15minutes.

Here is one version of it

1 (14½-oz.) can cream-style corn
1 cup evaporated milk
2 eggs
1/3 cup flour
1 tablespoon sugar
¼ cup butter, melted
¼ cup onions, finely chopped


Preheat the oven to 350º F.


In a lightly greased baking dish, combine all ingredients. Bake for 1 to 1¼
hours, or until browned and slightly puffy.
