I've looked online for lots of great clam chowder recipes, ive found a good one but none had the ingredient of vinegar. I used it to get that tangy flavor before at different restaurants, but I'm not sure what it was. Was it red wine vinegar? was it that other dark vinegar that i dont know the name of? Maybe it was white wine? Can someone help? I'll except new recipes for homemade clam chowder too! thanx!

Clam Chowder

Ingredients

(8 servings)

1 c Onions; finely Chopped
1 c Celery; Finely Chopped
2 c Potatoes; finely diced
13 oz Clams; & Juice (2 cans)
3/4 c Butter
3/4 c Flour
1 qt Milk
1 1/2 ts Salt
1/2 ts Pepper
2 tb Red wine Vinegar


Instructions

Drain Juice from clams and pour over onions, celery, and potatoes. Add enough water to barely cover. Cook vegetables. Meanwhile, melt butter, add flour and blend until smooth. Stirring constantly, add milk and cook until smooth & thick. Add Salt and pepper. Add white sauce, clams, and vinegar to vegetable mixture and heat through until thick. Serve hot. Makes about 8 servings-
(My variations: Add 3 cans of clams (and juice) instead of 2, also use about 4-6 C. potatoes, 3 T. Red wine vinegar. Goes just a little further.)

There is no vinegar in clam chowder. The vinegar is in the rue (sp?) Once your butter and flower get to the stage that they are beging to come together adding one TBsp of vinegar makes it all come together creamier and without lumps.

Malt vinegar is usually used, but a fine wine or red vinegar will work.

Malt vinegar is the key. But just a bit as some will not like it. You can add more to yours.

I would suggest a good Balsamic vinegar. It is not real acidic, and has a slight sweet taste
