Make a corn beef hash, you can serve it as a entree or a side to something else.
You could even make breakfast and serve it as dinner, hash, fried eggs and potatoes or even toast

Corned Beef and Cabbage is traditional. Add potatoes, carrots and yams or sweet potatoes for a little extra something.
Serve with corn bread made with canned corn added for the liquid. Cream style corn also works for this.

A great one pot dinner is corned beef and cabbage. When the corned beef is about two thirds done, add, small whole potatoes, carrots, celery sticks, small whole onions and a head or two of cabbage cut into quarters. Add pepper and cook until the veggies are tender. A favorite meal of mine.

Mix it into mashed, creamed, potatoes. Put it into an oven proof dish and pop it in the oven until it is brown on top. Serve with gravy, if you want and veg. Very nice!!
