Basic Meatballs
Ingredients
(6 servings)
1 lb Ground Beef
1/4 c Onion; Chopped, 1 Sm.
1/4 c Milk
1/8 ts Pepper
1 ea Egg; Large
1/3 c Bread Crumbs; Dry
3/4 ts Salt
1 ts Worcestershire Sauce
Instructions
Mix all the ingredients together. Shape mixture by Tablespoonfuls into 1 1/2-inch balls. (For ease in shaping the meatball, occasionally wet your hands with cold water.) TO COOK IN A SKILLET: Heat 1 Tbls salad oil in a large skillet, cook the meatballs over medium heat until brown, about 20 minutes. Drain off excess fat. TO COOK IN THE OVEN: Place the meatballs in a lightly greased baking pan 13 X 9 X 2 or 15 1/2 X 9 1/2 X 1-inch; bake, uncovered, in a 400 degree F. oven until light brown, about 20 minutes. Drain off the excess fat.

2 lbs ground beef
1 cup breadcrumbs (GF work great)
1/4 cup water
2 eggs
1 onion, grated
salt
pepper
1 (12 ounce) bottle chili sauce
1 (16 ounce) can whole-berry cranberry sauce
2 tablespoons brown sugar
1 tablespoon lemon juice
1 Combine first 5 ingredients, season with salt and pepper and chill.
2 While this is chilling, Combine the last 4 ingredients in a non-reactive pot. Simmer.
3 Form meat mixture into balls and lay out in a 9X13 baking dish (any size meatball should work). You don't need to bake them or brown them! They hold together well, as long as they chill first.
4 You can now carefully add the meatballs to your sauce and simmer for 1 hour OR you can pour the sauce over the meatballs, cover them with foil, and bake 1 hour at 325°F.

MEATBALLS IN TOMATO SAUCE
Serve these hearty meatballs over noodles or mashed potatoes.
Active time: 40 min Start to finish: 45 min
1 (28- to 32-oz) can whole plum tomatoes
2 garlic cloves, chopped
1 teaspoon dried oregano, crumbled
1 1/2 teaspoons salt
1/2 cup fine fresh bread crumbs
1/2 cup whole milk
1 1/2 lb meatloaf/meatball mix (mixed ground beef, pork, and veal)
1 medium onion, coarsely grated
5 tablespoons chopped fresh flat-leaf parsley
1/4 teaspoon dried hot red pepper flakes
1 1/2 tablespoons vegetable oil
Pulse tomatoes with their juice in a food processor until chopped. Simmer tomatoes with garlic, oregano, and 1/2 teaspoon salt in a 3-quart heavy saucepan, uncovered, stirring occasionally, until thickened, about 20 minutes.
While sauce is simmering, stir together bread crumbs and milk in a large bowl and let stand 5 minutes. Add meat, onion, 3 tablespoons parsley, red pepper flakes, and remaining teaspoon salt and blend with your hands until just combined well (do not overmix). Form 2-tablespoon amounts into meatballs (about 20).
Heat oil in a 12-inch heavy skillet over high heat until hot but not smoking, then sauté meatballs in 2 batches, turning occasionally, until well browned, about 5 minutes. Transfer as browned with a slotted spoon to tomato sauce.
Simmer meatballs, covered, stirring occasionally, until cooked through, about 5 minutes. Serve sprinkled with remaining 2 tablespoons parsley.
Makes 4 servings.

2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce
Roll into 1inch meatballs, brown on all sides in a skillet, place on baking sheet and bake at 350 for 45 minutes.

1 lb. ground beef, 1/4 lb. mild pork sausage, 1 egg, 1 cup, uncooked, instant rice, 1/2 mild onion, chopped finely, 1/2 can condensed tomato soup, 1/4 cup catsup. Mix completely and form into balls about the size of a large walnut. If you make them too large they can toughen by the time the center is finished cooking. They can be cooked by gently cooking them in spagetti sauce or they can be baked in a pan in the oven, either plain or drizzled with some catsup if your family prefers them this way.
The ways to prepare them are just about endless. Janet

Lipton onion soup mix (1 envelope)
salt, pepper, and garlic powder
Mix these ingredients well in a bowl. Shape into balls.
In a medium heat skillet, fry them OR bake in an 350 degree oven on a cookie sheet lined with foil for 25 minutes or until done.
Add the meatballs to your favorite sauce.

1 lb of ground meat (beef, chicken, turkey)
1/2 cup of grated parmesan cheese
1/2 cup of bread crumbs
2 slices of bread (preferably Italian) soaked in a little bit of milk until soft and then squeeze out the excess moisture.
1 large egg
1 tablespoon of dried oregano
1 tablespoon of garlic powder
2 tablespoons of chopped parsley
Salt and pepper to taste
Mix everything together. Form into golf-sized balls and sautee in oil until browned and cooked.

www.recipezaar.com,, but lately I have been buying the ones at walmart or traders joes ( turkey meatballs ) they taste good and it is so much faster and easier after working all day,
