Perfect Pumpkin Pie
INGREDIENTS
1 (15 ounce) can pumpkin
1 (14 ounce) can Sweetened Condensed Milk (NOT evaporated milk)
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 (9 inch) unbaked pie crust
DIRECTIONS
Preheat oven to 425 degrees F. Whisk pumpkin, condensed milk, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.
Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

Get a prepared frozen pie crust (if the crusts are small this will make 2 pies and you can freeze one). Bake the crust for 10 minutes take out and cool
Filling
1 can pumpkin
3 eggs beaten
1/2 cup brown sugar
1/2 cup white sugar
Spices: you can use apple pie or pumpkin pie spices or add 1 teaspoon cinnamon and 1/4 teaspoons of the following: nutmeg, cloves, allspice, ginger.
4 ounces softened cream cheese
2 tablespoons brandy, bourbon or rum
1/2 cup heavy cream
You can also add 1/2 cup chopped pecans and or 1/2 cup raisins you have soaked in rum, brandy or bourbon (keep it the same liquor as you put in the pie)
Mix the filling pour into the pie shell(s)
Bake at 325 for about 55 minutes. When you take the pie out it should be jut slightly wet in the middle - it will get solid as it cools.
Make Whipped Cream
2 cups whipping cream
Whip with a mixer until it becomes fairly stiff peaks
Add 4 tablespoons sugar whip to incorporate add one tablespoon: brandy, rum or bourbon (whatever you used in the pie) and whip - chill and serve on top of pie

First make your Pie Crust Dough. (You can make half a recipe; enough for 2 single crust pastry shells---beat egg, measure, and use half)
OLGA's PIE CRUST:
4 cups flour
1 Tablespoon sugar
2 teaspoons salt
1 3/4 cup Crisco Shortening
1/2 cup cold water
1 Tablespoon vinegar
1 egg
Stir the flour, sugar and salt together in a medium size bowl. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs.
In a small bowl beat together water, vinegar and egg. Add to flour mixture until the dough comes together. Gently gather dough particles together into a ball. Wrap in plastic, and chill for at least 30 minutes. Divide into 4 balls. Lightly flour sides of the ball and roll out on lightly floured board or pastry cloth. Makes two 9-inch double-crust pies.
Note: Dough can be refrigerator up to 3 days. It can also be frozen until ready to use; thaw until soft enough to roll.

While waiting for dough to chill, cook the pumpkin by the Microwave Method on this link. So much easier than boiling on the stovetop. After pumpkin is cooked, let it sit for awhile in a strainer to drain extra water/juices. Then mash the pumpkin with a potato masher until smooth.

1 2/3 cups evaporated milk (I use 1 (12oz.) can)
2 eggs, lightly beaten
1 unbaked pastry shell (9-inch)
Combine sugar, salt, and spices in a large mixing bowl. Add pumpkin, evaporated milk, and eggs; mix well. Pour into pastry-lined pie pan. Bake at 425 degrees for 15 minutes. Shield the crust edge with a pie shield ring or fashion one with aluminum foil and place over edge. Reduce heat to 350 degrees and bake 40 minutes or until center is set.
