I want to make fudge for the holidays and use it as gifts. I would like to start as soon as possible, but at the same time I'm not sure how soon I can start while maintaining the fudge's freshness. I don't want to put in all this effort and compromise the quality.

In my house about five minutes. Seriously though, fudge is best if it is given within a month after it is made. I usually make my Christmas candies starting the first weekend of December.

Make sure you store all of your fudge in air tight containers and you should be able to get several days of freshness.

If you freeze it, for months, but unfrozen I'd say a week or so, even in an airtight container. Your could freeze the individual portions and whip them out when you are ready to distribute them.

One week or so, after that it starts to degrade... never tried the freezing thing so I cant recommend that one way or the other.
