Chicken Parmesan
Last night I placed several boneless, skinless chicken breast in a casserole and covered in two regular sized cans of tomato sauce (I added Italian seasoning, garlic, salt and pepper to the sauce before pouring over chicken) - then I baked uncovered at 350 for about an hour. Just before it was done I sprinkled Parmesan cheese on top of the chicken and sauce.
I served this with boiled egg noodles, and a simple tossed salad. This was very easy.

Try simple sandwiches. Stick meat or something else in between two slices of bread, and voila there you have it, a somewhat balanced meal. To make it even healthier, use wholemeal bread, or if you can't really take the taste make one piece of bread white and the other wholemeal.
It's simple, filling, and tastes good. (:
(The other alternative would be instant stuff, like canned soup or cup noodles, but those are just waiting to kill you with MSG and trans-fat.)

Bonless chicken breasts browned in butter, add a can of mushroom soup and half of the can of heavy cream or white wine or both, salt pepper to taste and simmer on low heat covered for about 25 minutes.
You can do this with pork too but you have to cook it longer about 35 minutes depending on the thickness of the pork chop.

Marinade chicken or boneless pork chops with pkg or bottle marinade. Then cook in George Foreman grill.Buy some of those frozen veggies that you can heat up in the microwave and steams in the bag or a salad in a bag. Very simple.

Put a piece of salmon, and few cut up red potatoes, and some cut up veggies (yellow squash, zuccini or brocolli) in a steamer. That is a pan with little holes sitting on top of a pan of water. Put in whatever spices you like. I use salt, pepper, lemon pepper, butter and dried parsley. Steam for about 20 minutes and its done and you're ready to eat.
