honestly, i know it tastes better w/ french bread. the thing is my oven at home doesnt work and we dont have one at work. and if i do wake up early (7am) and go to my aunt's house to use their oven.. would it taste bad by the time like 12 rolls around? also bruschetta is put on top later when the bread is toasted right? you dont pop that in the oven, do you?

Garlic bread...
you don't need an oven for GB. Butter individual slices and Grill it in a pan or on a griddle.
Use either French or Italian bread for it.
Edit:
The Bruschetta should be cold
if you make the grilled GB at home you can serve that cold too..it still tastes great. If you want your bread warm you can reheat it in the nuker at work if you have one..but only for a few secs...nuked bread isn't that good.

Traditionally it's served with slices of toasted bread. If you don't have an oven at work, maybe you could bake the slices of french or italian bread at home, then top them with the bruschetta mixture when you get to work. They should still have some crunch to them.

Bruschetta is made with bread.
BRUSCHETTA WITH WHITE BEANS, TOMATOES AND OLIVES
2 cans Great Northern beans
3 plum tomatoes, seeded, chopped
1/4 cup chopped pitted Kalamata olives
6 tablespoons olive oil
1/4 cup chopped fresh basil
1 tablespoon minced garlic
1 French-bread baguette, cut into -inch-thick rounds 5 to 6 ounces soft fresh goat cheese (such as Montrachet), room temperature
Open the beans and rinse with cold water then drain
Trannsfer 1 1/2 cups beans to medium bowl (reserve remaining beans for another use) and mash then. Mix in tomatoes, olives, 4 tablespoons oil, basil and garlic. Season to taste with salt and pepper.
Preheat broiler. Place bread on baking sheet. Brush with 2 tablespoons oil. Broil until golden, about 1 minute. Spread with cheese. Top with bean mixture.

Bread, without a doubt. If you don't have an oven, slice the bread and let it sit out all day or overnight to give it that day-old crusty texture.
Top with the diced roma tomato and seasoning combo of your choice, and sprinkle some shredded parmesean on it. Serve it cold.
For a really different take on it, try this:

I don't think you can buy bruschetta... I thought it was a piece of texas toast with sauce and cheese on it. I think you bake it. The cheese is melted on top of sauce and tomato's? I don't know what your talking about but the answer to your question is bread I guess. Good Luck with the party!

Bruschetta is GRILLED bread rubbed with garlic and topped with extra-virgin olive oil, salt and pepper. Variations may include toppings of spicy red pepper, tomato, vegetables and/or cheese.
If you don't have an oven or grill, you could make appetizers out of crackers with dip and crudites or go with a non-cooked appy..

Better with French bread. Use, buy, or borrow somebody's toaster oven. They're quit inexpensive and compact.
Also, make a nice pasta cold salad. Maybe an Italian one.

Bread...do you have a toaster oven? Hot plate and fry pan? You can toast the bread with either of these. Toaster oven...toast it first then rub the bread with a split clove of garlic and drizzle on some olive oil. Fry pan...do the olive oil and fry the bread, then rub with garlic clove. I like chopped fresh tomatoes, basil and garlic on mine. Pesto with pine nuts is strong but good too.
