Grannies Yellow Squash and/or Zucchini Casserole
about 5 to 7 pounds yellow crook neck squash (or can use half yello half zucchini)
The squash cooks down to almost nothing so don't be fooled by the size of the squash before they are cooked
Soak squash in warm water and scrub with tough end of a scrubbing sponge. They hold a lot of sand so you want to get all the sand out. Cut off tops and bottoms and any imperfections. Cut them in half and then in quarters and get hunks about 3/4 inch thick or more. It will cook down.
2 or more large onions cut in big dice
Place diced onions and cut squash into a large pan with salt and pepper and bring to a boil covered. Boil about 10 mins until the squash are tender and the onions as well. Drain in a large colander or stainer. Let sit to get all the water out you can because they hold a lot of water.
In the hot pot they were cooked in put one stick of butter, put the drained squash and onions back into the pot and add more salt and pepper, some diced green onion tops. Stir lightly to get it all coated with butter. At this point you can add about 1/2 cup cracker crumbs (put some regular soda crackers in a plastic bag and roll or pound and about 6 ounces of melted Velveeta or grated yellow cheese (not melted) stir lightly. Can add some Cajun spice mix for extra punch or a wee bit of red cayenne pepper.
Add 1/2 tsp sugar or Monosodiumglutimate.
At this point Grannie put in a couple of beaten eggs, so it's like a souffle. Sometimes I put the eggs, sometimes not. Try it the first time without the eggs.
Add about 1/4 cup heavy cream and put it all into a big long square shallow glass casserole dish, top with more cracker crumbs and a lot of grated cheese. Bake at about 350 for about 20 minutes until golden and serve.

Pick up the sides from the deli counter, potato salad, bbq beans, macaroni salad, cole slaw. You could make any of these at home but the cost would be about the same and you wouldn't have a sink full of dishes and so much mess to clean up. some things are supposed to be easy. Save your energy, and your home made meals, for things more easily prepared in your kitchen.

Potato salad- skin and boil large potatos(chop them up first it goes faster) whle it is cooking chop the veggies needed: celery, onion, pickle relish (sweet), two boiled eggs and get yellow mustard, mayo and salt/pepper out and get ready to use your hands. Use put this all in a very large bowl and put some oil on your hands an mush it all together, add Mustard and Mayo to make is smoother. Make it the night before and it taste great the next right out og the refrig.
Or buy Bushes Baked Beans ( 2 cans) and heat and eat.
You can buy and boil small corn cobs too.

Try making: Cajun Potato Wedges
Potatoes Ingredients:
1/4 cup LAND O LAKES® Butter
1 tablespoon Cajun seasoning
2 (16-ounce) packages frozen potato wedges, thawed
Sauce Ingredients:
1 1/2 cups LAND O LAKES® Sour Cream
4 ounces (1 cup) LAND O LAKES® Cheddar Cheese, shredded
1/4 cup chopped green onions
1/4 cup milk
1/4 teaspoon garlic salt
4 to 6 drops hot pepper sauce
LAND O LAKES® Cheddar Cheese, shredded, if desired
Heat oven to 425°F. Combine butter and Cajun seasoning in 1-quart saucepan; heat until sizzling. Place potatoes on two greased aluminum foil-lined baking sheets with sides. Drizzle evenly with butter mixture; toss to coat. Bake for 25 to 30 minutes or until potatoes are golden brown and crisp.
Meanwhile, combine all sauce ingredients in medium bowl; mix until well blended. Spoon into serving bowl; garnish with additional shredded cheese, if desired. Serve potatoes with sauce.

i always cook a dish called broccoli rice and cheese casserole. The recipes is simple. here is the recipe for it. 1 cup of cooked rice,1 big jar of cheese whiz,1 medium size onion chpped& cooked,1 (16 oz) package of frozen chopped broccoli,1 can of cream of chicken,1 can of cream of celery and 1 stick of butter. First cook your rice set it aside. then cook your onion then mix your broccoli and cheese whiz together then your 2 soups then put in the cake size pan.then cut your butter in small pieces then put it all over the mixture in the pan. Bake it the oven @350 for 1hr or until the cheese is bubbly. the sevre. it is great good....My whole family loves it. My three year old loves it too....and she doesn't like alot of things

green bean casserole
1 can of green beans
1bag of crackers
1 can of creme of mushroom
and 2 cups shredded cheddar cheese
mix all ingredients in a casserole dish
microwave on high for 3-4 min.

go easy with some corn or something lol....pop the lid and serve it!! jk ummmm bbq chicken id say make some rice, mix a salad, or a fruit salad.... maybe some mashed potatoes...omg im getting hungry lol

You can make your own beans - they are awesome - or buy Bush's.
Corn bread is super easy from a packaged mix - use buttermilk.
