The key to beef and noodles like grandma used to make is homemade noodles. They aren't as hard as they sound!
3 egg yolks
1 whole egg
3 tablespoons cold water
1 teaspoon salt
2 cups flour
1. Beat the egg yolks with the whole egg until very light.
2. Beat in the salt and water.
3. Stir in the flour and work with hands until blended.
4. Divide dough into 2 parts.
5. Roll out each part as thin as possible on a lightly floured board.
6. Let stand until partially dry (like chamois skin), at least 1 hour, then roll up like a jelly roll and cut into strips of any desired width.
7. Shake out strips and allow them to finish drying before using or storing them.
==========================
While those are drying out, cook some sliced beef in water (and maybe some beef boullion) along with any vegetables that you like. Good ones are carrots, celery, and onion. Add you noodles, cook 'til finished, and eat up with some warm crusty bread.

This is my own rendition of beef noodles, my fiancee loves it (well at least that's what he said cos i've cooked noodles twice a week either shrimp, beef or chicken).
So, get a pot of water boiling, 2 sticks or roll-up of egg noodles (cook in boiling water for 2-3 minutes, drained) set aside, then cook the greens for 3-4 minutes, set aside as well.
Heat 2 tbsp of oil on low, add 3 cloves of garlic (smashed) and 1 small onion sliced, 2 star anise (optional), an inch of cinnamon stick. Fry till fragrant and golden, then add 1 liter of water (or more).
Add 1 beef or chicken cube, salt, sugar, white pepper powder to taste.
Add beef slices when soup is boiling, cook for 45 minutes on low heat, uncovered. 5 minutes before turning off heat, add thinly sliced green onions/cilantro.
Pour soup over noodles, enjoy! :) Now i'm hungry.
