Every time I look up a sauce that will go with chicken, it has wine as an ingredient. Now, I'm not averse to alcohol in general, but I just want something easy to make and I don't usually have wine in. Plus I have to say, I am not overwhelmingly in favour of adding alcohol to food that would be better in a glass!

So does anyone have any suggestions?

Homemade honey mustard sauce is my favorite for chicken, especially when it's baked or grilled. Use this recipe below for chicken that's both flavorful and moist.


1/4 cup olive oil
2 tablespoons mustard (any variety)
3 tablespoons honey (any variety)
2 cloves garlic, roughly choped (optional)
salt to taste
pepper to taste

combine all ingredients.
pour half the sauce over chicken during first half of cooking
pour the rest over the chicken during the last half of baking.
You may also add your favorite spices or spice blends, such as parsley, rosemary, basil or onion powder to give the sauce a custom kick.

Alcohol added to food for the sauce or in the dish, can be a wonderful flavor enhancer. Cooking with wine is a wonderful way to make mundane foods taste better. Alcohol cooks away during the heat process and leaves only flavor.

If you do not want to use wine you can sometimes use beer or juice or stock as a substitute.

Lemon or orange sauce is great: butter 3 tablespoons, 3 tablespoons flour, melt butter and stir in the flour be sure all the fould is incorporated into the butter, salt, pepper, pinch of onion or garlic powder, 1/2 cup juice of lemon or orange (fresh), Stir it will get very thick then add 1 cup heavy cream and 1/2 chicken stock bring to a boil whisking all the time, it will thicken and then you serve with the chicken. You can add some chopped parsley if you wish - fresh only.

Pan fry some chicken breasts, once browned add leaks and chicken stock, simmer until the chicken is tender and cooked through. Then add some borsin cheese crumbled in, stir until melted. Take off the heat and add some single cream. Season to taste. Serve with dauphinise pototoes and seasonal veg or on a bed of creamy garlic mash or with a ceaser type salad for a lighter meal (no need to add the ceaser dressing or if so just a little). Or just drink so much wine before u dont care what it taste like!

Simple....there's so many simple recipies.....where do i start....put the chicken in a casserole dish with a can of chicken soup and some oregano.....thats nice....melt some cheese milk/cream and wholegrain mustard together in a saucepan....add a little flour at the end...whisk thouroghly...thats nice too. A tin of chopped tomatoes, a little tom puree and some italian mixed herbs.....or.....chop some mushrooms fry them in a little garlic spread...add cream....and some cheese if your feeling adventurous...goats cheese is good in this one but any strong cheese will do...dont use a mild cheese the flavour will just get 'lost'. If you want a coating rather than a sauce...mix some cajun spice in a litle oil and fry the chicken in it...mixing any tangy spice in oil..such as paprika or cayenne pepper will do the job just as effectively....hope this keeps you occupied for a while....

Melt some Cheddar cheese in a saucepot
add some sour cream and Jalapeno slices
nice sauce for chicken.

If you want to cheat with sauces, you can buy some ready made ones. There are lots without alcohol in and they take no time at all to add in.

A friend of mine used to make this really nice chicken with rice.
She just cooked the chicken in a tin of cream of chicken soup.
Tasty and really easy to make.

Chop & fry mushrooms in butter. Then add a packet of mushroom soup,add enough water to make a sauce, add pepper to taste & cook. Lovely.

A quick and easy one is use a can of condensed soup, pour over the chicken and bake.
You can always add any veg you might have aroundto add more interest.

The simplest and easiest....1/2 pint double cream...and add wholegrain mustard to taste. Add the mustard to the warm cream near the end as it can go a little bitter...you can add spinach...or basil and pink peppercorns...it's REALLY easy if you just use the cream as a base !!!!!
