How about a mixed vegetable stir fry, it's cheap and some supermarkets sell the stuff pre packed. Just chuck it in a wok or frying pan for a few mins add a sauce of your choice then give it a min or 2 more then serve.
You can also have something on the side to go with it.
Or you can also make your own lasagna with a cream sauce instead of cheese sauce and serve with a salad and add honey and mustard sauce on the salad.

Get some vegetarian sausages. loads of oven baked veg you know peppers onions tomatoes and have mash or pasta whatever. Make some pepper sause courtesy of a packet made with skimmed milk and enjoy.
