Recipes are broken up by courses (sorta), so mix and match, and make as little or as much as you like! Good luck.

My Dad is italian and this has always been my FAVORITE thing he makes. I also made it for my boyfriend who is italian and he LOVED it too!!

Manicotti

2 tbs. oil
1 clove minced garlic
2 (8 oz) cans tomato sauce
medium tub ricotta cheese
1 tbs. flour
1 tsp. salt,
1 tsp. pepper
1 tsp. dried basil
1 cup shredded mozzarella
2 1/2 cups water
1 lb. ground beef
12 manicotti shells
3/4 cup onions

Sauce: In a skillet, heat oil and stir in garlic and 1/4 cup onions. Add tomato sauce. Combine flour and seasonings and stir into tomato sauce mixture. Add water, bring to a boil, reduce heat and let simmer 20-25 minutes uncovered.
Stuffing: Brown meat and onions. Pour out excess fat. Stir in ricotta cheese and basil. Stuff cooked manicotti shells with meat mixture and arrange in a 13x9x2 inch casserole dish. Pour sauce over shells and cover with tin foil. Bake at 400 degrees for 45-60 minutes. Remove foil and sprinkle with mozzarella cheese. Return to oven uncovered and bake until cheese is melted. Remove from oven and serve.
