Depends on the recipe. All purpose flour works if you just need a thickener.

Just use any plain flour you have to thicken or help bind together the ingredients.

If the recipe is for a sauce or gravy, you can just reduce the liquid up to half the quantity to intensify the flavour, add a big dollop of cream and stir, and it will thicken into a lovely sauce.

depends what you are using the corn starch for, if it is for thickening the gravy or as a covering before frying, then you could use chick pea flour or rice flour.

flour is a great thickener...just make sure you thin it a little with sauce from the dish, water or milk before adding it to the sauce your thickening otherwise it clumps.
