Classic BBQ Rib Sauce

INGREDIENTS:
1 can tomato sauce
1 can tomato paste
2 tablespoons brown sugar
2 tablespoons vinegar
2 tablespoons olive oil
3 cloves garlic crushed
4 tablespoons minced onion
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon cayenne
fresh ground pepper to taste
PREPARATION:
Cook minced onion and garlic in olive oil until onions turns opaque. Add remaining ingredients, mix thoroughly and allow to simmer 20 minutes. Makes about 1 1/2 cups.

Kansas City Rib Sauce

INGREDIENTS:
1 cup ketchup
1/4 cup water
1/4 cup vinegar
1/4 cup brown sugar
3 tablespoons olive oil
2 tablespoons paprika
1 tablespoon chili powder
2 cloves garlic, minced
1 teaspoon cayenne
PREPARATION:
Heat oil in a saucepan. Add garlic and sauté until brown. Add remaining ingredients and reduce heat. Simmer for 15 minutes.

Horseradish Sauce goes very well with beef - especially prime rib:

* 2 teaspoons mayonnaise
* 1 cup sour cream
* 3 tablespoons commercial horseradish
* 1/4 teaspoon salt
* 1 scant teaspoon sugar

PREPARATION:
Stir together all ingredients until smooth. Cover and chill for 4 hours or overnight.
Makes about 1 cup of horseradish sauce.

Take the beef out of the pan that you have cooked it in and put it to one side to rest. Put the dirty pan directly on the heat, add some red wine and boil it, this will deglaze the pan and suck up all those lovely beef juices. When its quite think, add some double cream (or creme fraiche if you're being healthy) and a handful of flat leaf parsley, rosemary and thyme.

Really simple and absolutely lovely.

Roast?
If so then what i do is this:
Remove the beef from the pan. Put beef stock in half a glass of boiling water and mix well and then added it to the pan. Add two spoons of red wine. Put the pan on hob nob and reduce to make nice rich gravy

a great recipe for beef is to cook it in 2 litres of coca cola. sounds weird i know but its a great way to make a bar - b - q beef rib add 4 tablespoon of tomato sauce if you want it extra sticky and baste throughout the reccomended cooking time. if you do have the time let the rib rest overnight in the coke. i know its sounds bizarre but it tastes divine!

INGREDIENTS:

1/4 cup lemon juice
1/4 cup white vinegar
1/4 cup olive oil
3 tablespoons honey
4 cloves garlic crushed
1 teaspoon cayenne
1 teaspoon ground black pepper

PREPARATION:

Mix all ingredients. Place ribs in a container large enough to lay one rack flat. Pour marinade over ribs, coating completely. Let rest over night. Turn ribs over occasionally to allow marinade to soak in. Prepare smoker. Remove ribs from marinade and place in smoker. Boil remaining marinade for two minutes and use as a baste for ribs.

Although not a sauce
thinly slice cucumber & onions & submerge in vinegar
lovely with Roast Beef.

you have THE best cut of Beef for roasting......

dont spoil it with a strong sauce because you will spoil the taste...
A simple gravy would be best,Home made of course!

with mustard(English of course) and Horseradish for those who like it

the Rib is the Butchers favourite Joint....

I would serve a "jus" rather than a sauce. Try this recipe for Madeira & Black Truffle Jus (you caa economise by substituting mushrooms for the Black Truffles:
