Baileys Creme Brulee
Serves: 12 - 6 oz servings

I N G R E D I E N T S
6 1/2 cups whipping cream
1 cup Bailey's
12 egg yolks
1 cup sugar
2 tablespoons vanilla

I N S T R U C T I O N S
Warm whipping cream and Bailey's over a double boiler. In a separate bowl, mix together egg yolks, sugar, and vanilla. Slowly add the warm cream mixture to the yolk mixture, stirring constantly. Pour mixture into individual soufflé cups and put soufflé cups into a 2" deep pan. Fill the pan with warm water and cover with foil. Bake at 350 degrees for 45 minutes or until set in the center. Don't over-cook, or eggs will curdle. Remove from oven and let cool. These will keep in the fridge for three days.

For the topping, mix equal parts brown and white sugar, then cover the tops of the custards. Cook under the broiler until caramelized.

A classic Italian egg-custard dessert.

Serves 6

You need:
3 egg yolks
Juice and zest of one small to medium-sized lemon
1 teaspoon vanilla essence
90 grams castor sugar
100 ml white wine
70 ml marsala

Method:
Place the egg yolks, zest, juice, vanilla essence and castor sugar in a stainless steel bowl and whisk until creamy and well-combined.

Put the steel bowl over a saucepan half full of boiling water to make a double-boiler. Add the white wine and marsala, and start to whisk the mixture vigorously in a figure-eight motion, until it has doubled in volume. This should take six or eight minutes. You'll know the zabaglione is done when there's no free liquid left at the bottom of the bowl.

Serving Suggestion: You could put fruit macerated in liqueur in the glasses, then pour the zabaglione over the top of the fruit, or substitute another liqueur (coffee, chocolate or hazelnut-flavoured type) for the marsala.

Hello.
My favourite is pineapple sponge mousse.Very soft and not too sweet.
Here is the recipe:

Ingredients:
1 tin of pineapple in cubes. You will also need the liquid of it.
1 tin of evaporated milk
6 gelatin leafs
2 or 3 packets of Marie biscuit.

First start to mix the evaporated milk in a big bowl. I recommend you use the electric mixture as this will take loads of time. Mix until it starts to get thick and gain volume.Maybe 10min....

Keep a side the Marie biscuit crushed.Very small pieces (almost as powder) like grain.

Warm up the juice from the pineapple tin and dissolve the gelatin leafs in there.Keep it steering so it does not get solid.

When the evaporated milk is done, add the gelatin and the pieces of pineapple.

In a big glass bowl start with the mixture and then layer of Marie biscuit and then the mixture.....put some pineapple pieces on top to decorate it.

Put in fridge and serve cold.

:)

I don't like sweet desserts, so one day I came up with something when I desperately needed to make a quick dessert.

I used a chocolate cake mix (but if you can do homemade, it's better). When it's baked, but still warm, pull off chunks of it and put it into single serving dishes. Top it with a little cherry pie filling, sliced almonds or walnuts, whipped cream, a little chocolate syrup, roasted coconut (you can do this in your microwave) and a dusting of cocoa. It isn't very sweet, and it tasted absolutely fantastic. Hard to believe I had all that stuff in my kitchen at one time. . . :\

*Update: I didn't think I could make this any better than I already had, but I've since found two more ways to make it. Using white cake instead of chocolate, you can add strawberries instead of cherry pie filling. Or, you can use pineapple, and extra coconut, but no cocoa. I prefer the last two over the first one.*

Easy Tiramisu ( and so good)
Ingredients (Cake)
CAKE MIX, white, 1 box off the shelf
VEGETABLE OIL SPRAY
WATER, 1-1/3
VEGETABLE OIL, 2 tbs
LARGE EGGS, 3
PURE VANILLA EXTRACT, 1 tsp

Ingredients (Syrup)
HOT WATER, 3/4 cup
INSTANT COFFEE POWDER, 2 tbs
GRANULATED SUGAR, 3 tbs
KAHLUA, 1/4 cup

Ingredients (Topping)
VANILLA YOGURT, 2 cups
CREAM CHEESE, 2 packages (8 oz. each) at room temperature
POWDERED SUGAR, 1/4 cup
UNSWEETENED COCOA POWDER, 1 tsp

Directions
Place a rack in the center of the oven and pre-heat the oven to 350 degrees.

Lightly mist a 13 X 9 inch baking pan with vegetable oil spray. Set aside.

Place the cake mix, water, oil, eggs, and vanilla in a large mixing bowl.

Blend with an electric mixer on low speed for 1 min. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to med. and beat 2 min more, scraping the sides down again if needed. The batter should look thick and well blended.

Pour the batter into the prepared pan, smoothing it out with spatula. Place in the oven.

Bake the cake until golden brown and springs back when lightly pressed with your finger, 32 to 35 min.

Remove the pan from the oven and place on a wire rack to cool.
Meanwhile, prepare the syrup. Place the hot water, coffee powder, and sugar in a small bowl and stir to combine until the coffee and sugar dissolve. Stir in the coffee liqueur.

Poke holes in the cooled cake with a chopstick or straw and spoon the syrup over the cake so that the syrup can seep down into the holes. Set the cake aside.

Prepare the topping. Place the yogurt, cream cheese and powdered sugar in a large mixing bowl and blend on low for 1 to 2 min. till well combined and thick.

Spread topping over the syrup-soaked cake, using a rubber spatula to spread the topping out to the edges of the cake.

No more then an hour before serving, sift the cocoa powder over the topping so that it covers the top of the cake.

Slice the cake into squares and serve.

I have 2 favorites:
Apple Dumplings.......peel and core apples......using pie crust ( I make my own, you can get the recipe anywhere) take a ball of pie crust and roll out into a circle large enough to over the apple.
Place apple in center..fill with sugar...sprinkle with cinnamon and nutmeg...place a pat of butter or margerine on top....fold crust up and around the apple and filling...place in a baking dish...repeat with as many as you like.... Now mix brown sugar about 2 cups with warm water..this will be thin..pour over apples and bake for about 1 and 1/2 hours at 350 degrees or until apples are tender and crusts are browned....If they are browing too fast...cover with foil. The sauce will thicken.....this is my grandmothers recipe.....

Angel Lush.....this is a simple and low fat dish.....
Take an angel food cake and slice into three layers.....lay aside.....
Mix one large box instant vanilla pudding (dry)...one can crushed pinapple and 1 cup light Coolwhip......spread this between the layers of the angelfood cake...make sure to keep the layers in order on the platter......then refridgerate for about an hour....this is delicious !!!!

Good Luck and Enjoy all the great ideas !!!!!
