Around here macaroni and cheese is a common dish. We are all pasta lovers and we make it in different ways. A person can put mostly anything in macaroni and cheese like cubed ham and onions or garlic or even place bread crumbs on top and bake it in the oven.
Velveeta is a processed cheese that comes in various sized boxes. It melts up better than cheddar or any other cheese. It is mild in taste and you can get mexican velveeta that has spices in it as well. For a hotter, spicy taste.
Depending on how many people you want to make macaroni cheese depends upon how much you use. If you have a large crowd of people, you need to make the whole box. Follow the directions as it says on the box. Cook the pasta al dente style. Place pasta in a bowl and put whatever you want in it, whether cubed ham or mushrooms or a little onion or garlic. Mix thoroughly. Then put the pasta mixture in a greased baking dish and slice a few pieces of Velveeta Processed Cheese on top. Bake in the oven at 325 degrees for one hour. For a real delight to the palette, fifteen minutes before you take out your pasta dish place seasoned bread crumbs on top of the macaroni and take it out of the oven when done. What a treat that is!
Good luck and happy eating! Enjoy!

I do not know about portions, but I make it like this...Boil the macaroni till almost ready, fry garlic, onion, bacon and mushrooms in a little olive oil. Grate a couple of different cheeses and mix in together make a cupful of cheese sauce give it all a good mix and sprinkle some parmesan shavings on top, put under the hot grill until bubbling and brown....Delicious.

You can also buy Velveta Shells N Cheese. This is the one my family likes best. You can just also experiement with pasta amounts and cheese. Try all types of cheese until you find one that melts well and tastes good. Adding bacon, or hamburger meat, is good too. My brother loves the Velveta with hamburger meat in it. My mom seasons the meat just a little and cooks it. Then she drains it and mixes it in with the mac and cheese. Cooking should be fun, so just play with it until you find a good one.

As others have said use velvetta, milk, salt and pepper but the secret ingredient a big spoon full of mustard (type your choice) top with breadcrumbs and bake for 40 minutes or so -- let rest about 10minutes before serving.
