Are brownies OK? they are easy, one bowl, some oil, water, and eggs. and you can always frost them to fancy them up.
Call and ask, maybe some Rice Krispie treats would be OK, if you explain your lack of cake baking skills. Try their website, they had a cute way to stack them to look like a Xmas tree a couple years ago, maybe it is still available.
Try the grocery isle, they sell box cake mixes that are baked in an 8x8 pan, easier to get them out of the pan. And relativly foolproof.
Or maybe a batch of Fantasy Fudge would do.
Or, the grocery or the bakery will be getting your business that day! LOL, I can't bake a layered cake either, it always tastes great, but is usually a little lopsided.
Buckeye candy is easy, peanut butter and powdered sugar, dipped in melted chocolate chips.
Or take a big can of chinese noodles, and about 1/2 cup of peanuts[not dry roasted or Spainish]. Put it in a bowl. Melt butterscoth chips, and pour it over the noodles and nuts, Stir well. Drop onto waxed paper on a cookie sheet.Chill, and wrap each in a baggie. They are called Haystacks. You can use chocolate chips, and tiny marshmallow and pecans, tastes like pecan bark.
Try cupcakes. they are easier than a big cake, go to Martha Stewart.com for easy or fun ways to decorate them.
Most bake sales have things you can buy whole, or some individually wrapped stuff for smaller budgets.
Try a dump cake, it's dry cake mix, margaringe, and fruit cocktail. allrecipes.com A friend took it to work for a potluck, and now she has to bring it everytime, everybody loves it.

Melt some chocolate and a dab of butter and then mix in rice crispies or cornflakes. You can add glace cherries or sultanas if you want to make them a bit different. Beware though, it takes a lot more cereal than you think it would. You can always melt some Mars bars in the microwave, being careful not to burn the chocolate, and then mix in the cereal. This is really nice alternative to the normal chocolate variety.

Buy some sweet puff pastry from the supermarket already made up and cut it into circles. Blob on a small amount of jam and cook in the oven.

Buy some ready-made fairy cakes and flat biscuits and then have fun icing them. You can buy all different toppings and writing icing so they can be personalised. Or cut the top off the fairy cakes and make some icing out of icing sugar and butter mixed together and fill the cake, replacing the cut off bit.

Or mix icing sugar to a thick consistency with water and add some peppermint essence then cut them out with a small pastry cutter or roll it into balls.

Here's a good and easy recipe that shouldn't be hard to follow at all. Buy a boxed yellow cake mix. Follow the directions on the box. Take one can of crushed Pineapple and drain it saving the juice. Place crushed pineapple in your cake mix batter and stir. Place the cake mix batter in a greased cake pan 9x13" and bake according to directions on box. While it is baking you can make the sauce like icing. Put the juice of the pineapple in a bowl and heat it a minute either on the stove or in the microwave. Put a tablespoon of corn starch into it to make it thicker. Continue to stir and then add 1/2 cup of confectioner's sugar into it and stir and taste for sweetness. Cool. When the cake is cold, place the sauce like icing ontop of the cake. It's easy and yummy at the same time!

Good luck and I hope you enjoy this recipe!

Bake the ones in the box following package directions and adding 1 tsp pure vanilla extract. Then do the following (because making it visually appealing is the key to selling at a bake sale) :) Purchase disposable aluminum foil cake pans with clear plastic lids at the grocery store (the rectangle ones so you're not making layer cakes - they're far easier)

When you put the batter into the pan, you don't even need to grease and flour it... but make sure it's evenly distributed... use a spatula to flatten it out if necessary... and leave it sit on counter for 15 minutes before baking.

Use chocolate cake mix and chocolate frosting, top with raspberry flavored chocolate chips and garnish with a few of those gummy red and black raspberry candies. Make a label for your plastic lid that says "Raspberry Truffle Cake." Blank side of white index card and a package of magic markers works great for this.

Chocolate cake mix, chocolate frosting, Heath toffee bits/pieces (from chocolate chip section of grocery) on top of frosting... call it a "Chocolate Toffee Crunch Cake"

Use lemon cake mix and lemon frosting and yellow sugar sprinkles (the crystals in the cake decorating aisle at grocery store) and label it a "Lemon Sparkle Cake"

Do the same with strawberry cake mix, strawberry frosting, pink sugar sprinkles "Strawberry Sparkle Cake"

If you're artistic, draw little lemons or strawberries, toffee bars or truffles with pink filling on these index cards. I'm telling you this has worked for me for years at bake sales because it just makes your cake look a little more *special* :)

Try a chocolate cake with chocolate frosting decorated with those little Hershey Kissables colorful candies. Call it your "Totally Kissable Cake".... I'm sure you're getting the picture - lol

Buy cake mix, and store made icing, and a disposable aluminum 9x13 tray....it can't get any easier than that. Add whatever you want to the mix prior baking like raisins or chocoalte chips. You can also use the cake mix in muffin tins (with muffin cups). Ice the muffin, and sprinkle mini M&Ms on it. Too easy.

A 6oz cake

6oz sugar
6oz marg/butter
6 oz flour ( 50z flour + 1oz cocoa powder = for choc cake)
6oz eggs (3 medium eggs)

WHisk all together and put in microwave for 5 mins, check that top isn't tacky or put in for a 1 min at a time. Not too long otherwise it'll over cook and go hard or burn.
Good luck
