whats it called when, if youd gotten in an accident or something, and a bone comes out of your skin??

it's called an open or compound fracture
these fractures are extremely critical and a person should be transported to the hospital by ambulance or helicopter only except in extreme cases where a private vehicle is the only possible way to transport
the bone and wound area should not be touched with ANYTHING (this includes covering it). you could further injure the person and possibly introduce germs to the wound causing infection.

I believe it is called a fracture. I surfed the web for a little more detail but I have found it is a fracture eiter way.

It's an "open fracture" like suggested and it's also called a "compound fracture".
