AMISH TURNIPS
2 c. cooked turnips
2/3 c. bread crumbs
1 tbsp. butter
2 tbsp. brown sugar
1 c. milk
1 egg
Salt and pepper
Cook turnips until tender. Drain, mash and then add 1/2 cup bread crumbs, saving rest for top. Add egg, sugar, milk, salt and pepper to taste. Mix together; pour into greased baking dish. Dot with butter and rest of crumbs. Bake 45 minutes at 375 degrees.
BAKED TURNIP CASSEROLE
1/2 lb. chopped bacon
12 turnips
2 onions, chopped
1 clove garlic, finely chopped
1 bell pepper, chopped
1/2 can pet milk (sm.)
2 egg yolks
3 slices bread, toasted & crumbled
1/2 stick butter
2 tsp. onion tops, finely chopped
2 tsp. parsley, finely chopped
Salt & pepper to taste
Pare and boil turnips. Drain and mash. Saute chopped bacon in heavy pot. When lightly browned, add onions, bell pepper and garlic. Cook over low heat until tender. Then add turnips and cook mixture approximately 1/2 hour.
Beat egg yolks and mix with Pet milk and bread crumbs and add to mixture. Add onion tops, parsley, salt and pepper to taste. Pour into casserole and sprinkle with minced bacon. Bake at 350 degrees for 1/2 hour.

Curried-turnips
Need:
-Two large turnips
-One can or one cup frozen or fresh peas
-One medium onion
-One table-spoon curry.
Note: Be carefull in adding more curry. This spice is like Tequila:
Just a little to much can come back and kick you in the head.
-One tea-spoon both basil and mint
-One cup low fat or no fat soy milk.
Note: DO NOT sub with water.
-Salt and pepper to taste.
To Make:
Coarsely chop onion. In a wide bottom pot or deep frying pan add onion,
soy milk, and all spice. Raise to a simmer, cover, and simmer for 10
minuets. Meanwhile, peel and chop turnips into large chunks.
Add turnips, stir, and raise back to a simmer. Cover and let cook
untill turnips are cooked through, about 20 minuets.
Once turnips are cooked, check the pan and add more soy milk if the
mixture is too dry. Then add peas and simmer for about two or three
minuets.
Remember: The peas' should always go in last. If you add them
sooner, they will disintegrate.
Dish up and eat!
Mashed Turnips
You Will Need
4 cups turnips, peeled and diced
1/4 cup unsalted butter
2 cups heavy cream
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon nutmeg
What to Do
1. Place turnips in a large pot of cold water, bring to a boil, and cook until tender -- about 15 minutes -- and drain.
2. Put turnips through a food mill or puree in a food processor.
3. Stir in butter, cream and seasonings. Add additional salt and pepper to taste.
Serves 8

TURNIP AND ONION GRATIN
Can be prepared in 45 minutes or less.
1/2 pound turnips, peeled and grated
1 onion, chopped fine
2 teaspoons cornstarch
1/4 cup plus 1 tablespoon freshly grated Parmesan
1/3 cup heavy cream
In a bowl toss the turnips and the onion with the cornstarch, 1/4 cup of the Parmesan and salt and pepper to taste and transfer the mixture to a buttered 9-inch-square baking dish, patting it down. Drizzle the cream evenly over the mixture, sprinkle the mixture with the remaining 1 tablespoon Parmesan, and bake the gratin in the middle of a preheated 375°F. oven for 25 to 30 minutes, or until the top is golden.
Serves 2.
