Well you can have many girlfriends in your life , but you have just one wife ( hopefully , it is what everybody is thinking when getting married : that it will last forever ) ..
A wife has more expectations from all points of view .... a wife means already the woman you decide to live your whole life with ...a wife has more rights : moral rights and also legal :)

All unfunny anecdotes aside, a girlfriend is not secure. She can leave at a second's notice. She has no legal or social ties to you. She has no say in what happens to you if you are in a life-altering accident. She has no reason to respect your family; she can leave and never see them again. She is more likely to cheat on you. The sex is sometimes better with her.
A wife is forever. She will always be there for you. She has legal ties to you and your property. Your families witnessed your commitment in a legal ceremony. She has to respect your parents and siblings because she will be around them for many years. She can execute your wishes in the event you are rendered helpless. Sex is always better with her (Honest! Trusted studies have proven this.)
