Well this is the old way I learned from my grandmother, she would cut them in half and then clean them.
then she would take a half stick of butter and 1/2 cup brown sugar put that in the middle then top them off with evaporated milk and bake them for 1 1/2 hrs. this is how my family love them this is also a good way to cook acorn squash..

Slice the squash in half, length wise.
Scoop out the middle, place the squash in a Pyrex baking dish, add a 1/2 cup of water to the dish, not over the squash.
Sprinkle a little sea salt over the squash, then a little brown sugar.
Cover the dish with tinfoil, do not allow the foil to touch the squash.
Bake @ 350 for about an hour.

I use an acorn squash, I cut mine in half leave the outside on scoop out the center and sprinkle it with salt ane pepper put a large meatball of ground turkey or ground beef in the middle sprinkle with desired seasonings wrap in foil and bake in the oven at 350 degrees for about 1 hour.This is so good and its an entire meal in one.

Soup is great! Try using sweet potato, b'nut squash, fresh root ginger, chopped bacon and chilli together. It's amazing! Great at this time of year! Also, I went to our local Harvester the other day. They do halved b'nut squash roasted in the oven and then they've scooped out the flesh, mixed it with mushrooms and onion and spices, put it back in, sprinkled parmesan on top and put it back in the oven. It was delish! Oh, and you can't beat it roasted in cubes! It's my favourite vegetable ever!!!

You can cook squash in a variety of ways,,, think of it as a potato you can mash, boil,roast, simmer in stock etc.
I need to really know what you would like to do with it first as boiled squash wouldn't be as good as maybe a squash gratin to go with a roast Lamb.

Cut down the middle, sprinkle with five spice (or just good old salt & pepper). Scoop your centre out & stuff the core with tomberries (cherry tomatoes) garlic, herbs of your choice and roast. Add crème fraiche for a creamy centre, spray in low cal oil or olive oil & cover in foil...don t let it stick....yumilicious...enjoy. Add curry powder for a hint of ooommmfff.

Ok......two simple recipees.......Cut up into small chunks butternut squash and carrotts. when cooked, trasfer to a pyrex dish and put a knob of butter ontop with a little salt and black pepper, put in oven for 10 minutes, serve with Lasagne and crusty bread.....lovely. Sounds a bit weird, but you will love it.

Secondly: Cut up squash and potatoes and pumpkin, boil for 20 minutes, drain and mash with butter, salt and pepper........best mash ever. Enjoy

Carefully peel with a sharp knife, cut into wedges. Sprinkle with Nutmeg/ All spice. Same length of time as roast Potatoes/ Sweet Potatoes

You could roast it as others have suggested or how about using it with chicken to make a rissotto.We love it like that

Cut into cubes drizzle with salt and pepper
and smear with butter blobs and bake for
15min. or tender ( med. setting ). Delicious.
