I'm going to New York for a short break in January and I want to get out of the city for 2-3 days into the countryside. I'll have a car. Any recommendations on where to go?

Here are a couple of suggestions...

Head up to the Adirondacks to do some skiing, enjoy the mountains, check out the Olympic Village at Lake Placid, etc. (sort of a trek tho)

Cooperstown for the Baseball Hall of Fame.

Hyde Park along the Hudson River. Check out the Rockefeller and Astor homes along the River.

West Point/Bear Mountain.

Catskill Mountains...lots of quaint towns there with an emphasis on art, antiques, etc.

i grew up there till i was 30 i know the autobon society has a bird run through nj from the mountains to the coastal areas very natural and diversified and they spot more varietys of birds here than any of there runs on the east coast ,,,,,,what im saying is although you may not be a bird watcher don't rule out nj it has ALOT of counryside contrary to popular belief look at autobons rout and follow it ,,,it would take 2-3 days and you would see ALL dif country side the ocean and coast are beutifull in winter atlantic highlands,, barnagatbay area at the tip of seaside theres a beutifull national park I cant remember the name been there a 100 's of times its 5;00 -6;00 still sleepy and the dairy and mount areas are real nice in jan and u won't likely get caught in snowstorm as u would upstate NY i just spent my vaca nyc area a month had ALOT of FUN i miss nyc and nj alot and you will still have all the amenities antiqus history good food good hotels and not ALOT of snow that will slow you down if its bad upstate ny and theres skiing nj mounts im not against upstate just the weather if you are driving could be a factor in jan

Niagara Falls by all means. A drive though beautiful up state NY culminating at the Falls would be a thrill indeed.
