All purpose flour is nothing but maida....
Is is derived from wheat flour...from which husk, semolina has been removed...its is soft in texture...majorly used in baking cakes and cookies

I gather you're referring to gray or white all purpose flour. It's just highly processed pure wheat and that's why it's not brown.. it's pale gray if not bleached. If it's bleached then it's white flour. Great for cookies, great for perogies, great for cake, Great for white bread. Somethings you'll need to add things like yeast, or baking soda, or baking powder depending on what you are making! Cookies are one of the easiest things to make! Homemade cookies taste a lot better than store bought ones! I use to buy cookies from Girl Guides cause they were home made. They don't sell the homemade ones anymore so I don't buy from them.. I'm not going pay $4 for a $2 box of store bought cookies.. I don't care who's selling them! It's the cookie companies that put down the idea of people selling homemade cookies cause they think they are losing money because of those selling homemade cookies! if you sell homemade cookies put your name with them so people know they are good!
Brown flour a wholewheat is more nitrutious and you can use it to make cookies! Not good for
perogies thouh!

Yes its made of wheat possibly a different kind as compared to the brown wheat that we see. Also, it goes thru lot more processes so its white & fine.

there are soft, hard and medium strength flours depending on their gelatin
content. all purpose flour has medium strength making it most favourable for all bakery products.
