Here are some fruit salad recipes I've collected. Enjoy!

Fall Festival Fruit Salad
Servings: 4

Ingredients:
1 head Iceberg lettuce
1 red apple, cored and thinly sliced
1/4 lbs grapes
1 cantaloupe, or other melon, seeded, pared, and cut into chunks
- Pomegranate seeds (optional)
- Citrus Dressing:
1/2 cup plain yogurt
1/4 cup unsweetened orange juice concentrate, thawed

Core, rinse, and thoroughly drain lettuce. Using a stainless steel knife, cut into bite-size chunks. Arrange apple slices, grape clusters, and melon wedges on lettuce. Sprinkle pomegranate seed over top. Chill. When ready to serve, drizzle Citrus Dressing over all.

Citrus Dressing: Combine ingredients, whir smooth. Makes about 1 cup.





Rainbow Fruit Salad
Servings: 12

Ingredients:
1 large mango, peeled and diced
2 cups fresh blueberries
2 bananas, sliced
2 cups fresh strawberries, halved
2 cups seedless grapes
2 nectarines, unpeeled and sliced
1 kiwi fruit, peeled and sliced

- Honey Orange Sauce for Rainbow salad:
1/3 cup unsweetened orange juice
2 Tbsp lemon juice
1 1/2 Tbsp honey
1/4 tsp ground ginger
- dash of nutmeg


Prepare the fruit. Combine all ingredients for sauce and mix. Just before serving, pour Honey Orange Sauce over fruit.






Winter Fruit Salad
Servings: 5

Ingredients:
1 20-oz can pineapple chunks
1 16-oz can pear halves
1 16-oz can sliced peaches
1 16-oz can apricot halves
1 1/4 can lemon or vanilla lowfat yogurt
1 cup granola (optional)

Drain each can of fruit very well. Cut the pear halves several times each, the peaches once, the apricots once. Mix them up in a medium sized bowl. Pour the yogurt over the top and blend gently. Spoon 1 cup servings into 5 different bowls and sprinkle the granola on top.





Glorious Fresh Fruit Salad
Servings: 6

Ingredients:
2 thinly sliced, unpeeled apples (Empire, Cortland, Ida Red)
1 cup seedless green or red grapes
1 sliced banana
1 can (16 oz.) pineapple chunks, drained
1 cup cantaloupe, cut up
1 kiwifruit, peeled and sliced
1/4 cup low fat sour cream or sour cream substitute
1 cup low fat small-curd cottage cheese, creamed
1 cup low fat vanilla yogurt
2 Tbsp honey
2 tsp lime juice

To make dressing, combine sour cream, cottage cheese, and yogurt. Mix well. Blend in honey and lime juice. To make salad, combine first five fruits with a little of the dressing; garnish with slices of kiwifruit. Serve remaining dressing separately.




Champagne Salad
Srvings: 8


Champagne Layer
1 envelope unflavored gelatine
2 tablespoons water
1 cup champagne
3/4 cup water
3 drops red food color
1 pint fresh strawberries

Soften gelatine in the 2 tablespoons water, then set over hot water to melt. Combine champagne, the 3/4 cup water and food color. Stir in melted gelatine. Pour into 2-quart mold and chill until almost set.

Carefully push about one half of the strawberries, pointed end first, into gelatine mixture. Chill until firm, then add Spiced Cheese Layer.

Spiced Cheese Layer:
8 ounces cream cheese
1 teaspoon lemon zest
1/2 teaspoon ginger
Dash of mace
Dash of cardamom
1 (8 1/2 ounce) can crushed pineapple, drained
3/4 cup reconstituted frozen limeade
3 drops green food color
1/4 cup toasted slivered almonds
1 envelope unflavored gelatine
2 tablespoons water

Have cheese at room temperature. Add lemon zest, ginger, mace and cardamom and beat until fluffy. Add pineapple, limeade, food color and almonds. Mix well. Soften gelatine in water; set over hot water to melt. Add gelatine to cream cheese mixture, mixing well. Spread over Champagne Layer. Chill until firm. Remove from mold. Garnish with crisp lettuce and the remaining fresh strawberries.




Festive Fruit Salad recipe
Servings: 12 - 16

1 (20 ounce) can pineapple chunks
1/2 cup granulated sugar
3 tablespoons all-purpose flour
2 (11 ounce) cans mandarin oranges, drained
1 (20 ounce) can pears, drained and chopped
3 kiwifruit, peeled and sliced
2 large unpeeled apples, chopped
1 cup pecan halves
1 can passion fruit, drained
1 cup grapes

Drain pineapple, reserving juice. Set pineapple aside. Pour juice into a small saucepan; with sugar and flour. Bring to a boil. Remove from heat, cool. Refrigerate.

In a large bowl, combine pineapple, oranges, pears, kiwi, apples, passion fruit, grapes and pecans. Pour dressing over and blend well. Cover and chill for 1 hour.





Coconut Strawberry Salad recipe
Servings: 6 to 8

1 quart strawberries, hulled and quartered
Granulated sugar to taste
1 (20 ounce) can pineapple chunks, drained
1 cup flaked sweetened coconut
2/3 cup orange juice

Cut the strawberries into quarters and sprinkle them with sugar. Stir to coat and allow to macerate for 30 minutes to one hour.

In a glass bowl, mix together strawberries, pineapple, and coconut. Drizzle orange juice over and stir to mix. Refrigerate for at least one hour before serving. Serve cold.

3 tablespoons finely chopped maraschino cherries
1 can (8 to 9 ounces) crushed pineapple, drained
2 cups sour cream
3/4 cup sugar
2 tablespoons lemon juice
1/8 teaspoon salt
1/3 cup walnuts, coarsely chopped
1 banana, ripe but still firm, chopped
Place chopped cherries on paper towels to absorb moisture; set aside. Mix together the sour cream, sugar, lemon juice, and salt; stir in pineapple, walnuts, and cherries. Stir in chopped banana. Spoon into paper-lined muffin cups and freeze until firm. Let stand at room temperature for a few minutes to soften just slightly.
Serves 8 to 10.

Summertime Tropical Fruit Salad

"A yummy and refreshing fruit salad with or without the dip. You should be able to find all of the fruits in larger grocery or special food stores. You can substitute almond extract for the vanilla extract, if you wish."
Original recipe yield: 2 to 4 servings

PREP TIME 10 Min
READY IN 10 Min

INGREDIENTS
1 mango - peeled, seeded and cubed
1 papaya - peeled, seeded and cubed
2 mandarin oranges, peeled and segmented
2 kiwis, peeled and sliced
1/2 fresh pineapple - peeled, cored and cubed
1 (8 ounce) package cream cheese, room temperature
1 (7 ounce) jar marshmallow fluff
1 tablespoon vanilla extract
DIRECTIONS
In a large bowl, gently toss together the mango, papaya, oranges, kiwis and pineapple.
In a medium bowl, blend cream cheese, marshmallow and vanilla extract on medium speed with an electric mixer until smooth and creamy. Topping can be poured over fruit or left in a separate bowl for dipping.

I make my own dressing for fruit salad--no recipe. Put in a huge spoonful of Miracle Whip or Mayo, sprinkle on some celery seed, squirt on some lemon juice, add 4-6 little spoonfuls of sugar and mix it up. Taste it to see if it is good enough. Then mix it in the fruit salad which usually consists of whatever fruit I have on hand: cut up apples, bananas, grapes, raisins, pears, strawberries, dried blueberries, dried cranberries, and chopped nuts.

This is my favorite fruit salad. Easy to do, delicious and everything you need is readily available.

Nisey's Fruit Salad

2 bananas, sliced
2 apples, 1 green and 1 red, chopped
1 can pineapple chunks
1 can mandrin oranges or 2 fresh oranges, peeled and chopped
Sauce:
1 cup orange juice
2 TB lemon juice
2 TB corn starch
1/2 cup sugar
Mix together and cook until thick and clear. Let cool while cutting up the fruit. Put cut up fruit in bowl, mix in sauce and serve.

this recipe can be mad e quick and ina jiffy

ingredients:

pick and cut as many fruits as you like
(say 1 from each variety if theyy are small then 2 from each of them)

200ml condensed milk

method :
put in allt he fruits in a bowl and mix them together with a spoon or just a toss or two would do..

then pur in the condensed milk into the bowl and mix it well with a ladle when you see all the fruits are covered with the condensed mik then cover the bowl and keept it an hour in the fridge and serve it when it is time to have a real salad

Hawaiian Fruit Salad
This really tastes better with fresh fruit but, in a pinch you can use canned just remember to drain the fruit first.

4-6 servings
cup fresh pineapple, cut into bite-size pieces
1 papaya, peeled,seeded,and cut into bite-size pieces
1 cup fresh strawberries, sliced
2 kiwi fruits, peeled and sliced
1 lime, juice of

Combine all ingredients in a serving bowl and serve chilled.

use 1 can of sour cream 1 med can of crushed pineapple and small marshmallows garnish with coconut. My grandmother always made it around the holidays very good not exactly a fruit salad but it is sweet although I have heard that you can use sour cream with pieces of fruit in a salad or maybe even youghert good luck

Use fruit of your choice,coconut,miniature marshmellows and sour cream.At picnics I always make two bowls,one with cool-whip and one with sour cream.They are not only colorful they must taste good because there is never any left.

Here is a recipe I found that sounds really yummy! The dressing is juice of one lime, pineapple juice and 1 teaspoon ground ginger.

Try cool whip or yogurt. Add accents such as cinnamon, curry, or walnuts.
