Hubby picked up a lot of apples. what can i do with them? Any suggestions?

they are all different sizes ... some really big some very small!

APPLE SPICE CAKE WITH WALNUTS AND CURRANTS
A high proportion of butter makes for an extra-smooth and rich icing. For best results, use Philadelphia-brand cream cheese.

Cinnamon-Sugar Walnuts
1 egg white
1 cup large walnut pieces
2 tablespoons sugar
1/2 teaspoon ground cinnamon
Cake
1 tablespoon plus 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
2 medium Granny Smith apples, peeled, cored, cut into 1/2-inch pieces
2 medium Jonagold apples, peeled, cored, cut into 1/2-inch pieces

1 3/4 cups all purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 1/4 cups sugar
1 large egg
1 cup toasted walnuts, chopped
1 cup dried currants

Icing
1 8-ounce package cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
1 cup (packed) powdered sugar
1 teaspoon vanilla extract

1 generous teaspoon dried currants




For walnuts:
Preheat oven to 375°F. Line large baking sheet with foil. Beat egg white in medium bowl until foamy. Mix in remaining ingredients. Spread walnuts in single layer on prepared sheet. Bake until walnuts are golden, about 10 minutes. Cool on baking sheet. Transfer walnuts to work surface and chop coarsely.
For cake:
Melt 1 tablespoon butter in heavy large saucepan over medium-low heat. Add all apples; cover and simmer until apples are juicy and almost tender, stirring occasionally, about 18 minutes. Uncover and simmer until almost all juices evaporate, about 6 minutes. Using potato masher, mash apples in pan. Cool.

Position rack in center of oven and preheat oven to 350°F. Butter and flour two 8-inch-diameter cake pans with 1 1/2-inch-high sides. Whisk flour and next 5 ingredients in medium bowl. Using electric mixer, beat remaining 3/4 cup butter and sugar in large bowl until light and fluffy. Beat in egg. Beat in half of flour mixture on low speed, then all of applesauce, then remaining flour mixture. Mix in 1 cup toasted walnuts and currants.

Divide batter between pans; smooth tops. Bake cakes until tester inserted into center comes out clean, about 40 minutes. Cool cakes in pans on racks 5 minutes. Turn cakes out onto racks and cool.

For icing:
Using electric mixer, beat cream cheese and butter in large bowl until fluffy. Add powdered sugar and vanilla and beat to blend.

Place 1 cake layer on plate; spread 1/2 cup icing over top. Top with second cake layer. Spread remaining icing over top and sides of cake. Arrange cinnamon-sugar walnuts in ring 1/2 inch in from edge of cake. Sprinkle walnuts with currants. Chill cake until icing sets, about 30 minutes. (Can be prepared 1 day ahead. Cover with cake dome and keep chilled. Bring to room temperature before serving.)

Makes 8 to 10 servings.

Apple pie or apple sauce would be good, for the bigger apples try this they are really tasty...

Nut and Brown Sugar Stuffed Macintosh Apples
Baked Stuffed Apples:
6 medium McIntosh apples
2 wedges lemon
6 tablespoons butter, softened
1 cup dark brown sugar
1/4 teaspoon freshly grated or ground nutmeg
1/2 teaspoon ground cinnamon
1/2 cup walnut pieces
1/2 cup all-purpose flour
1/4 cup oatmeal
Preheat oven to 425 degrees F.
Trim a thin slice off of the bottom of each apple. Cut the tops off apples and trim way skin of tops of apples, trim should be 1/2-inch wide. Hollow out the apples with a small paring knife, carving out a cavity for the filling. Rub the tops and cavities with wedges of lemon to retard browning.

Combine butter, sugar, nutmeg, cinnamon, nuts, flour and oatmeal in a bowl -- mixture should be crumbly -- and then pack into apples. Place apples in a shallow baking dish and add 1/4-inch of water to the dish. Bake apples 17 to 20 minutes, until filling bubbles and apples are tender but not soft. Remove from oven. Serve warm or room temperature.

make apple crisp you can buy the mix right where the apples are sold in the store or even amke applesauce cut then up and cook with a small amount of water. Also baked apples core them sprinkle sith cinnammon and sugar and bake Im not sure of the time or temp good luck

Make up, and freeze half baked apple pies to enjoy during the winter. You can make apple butter with some too. It is very easy to can. There is also apple crisp. Grab a cook book. It is fun to see all you can make from apple bread to apple dumplings.

Depend on the type of apples. Sour apples make good pie. I would juice the sweet ones and make booze.

Eat them. Fruit salad, apple pie, apple custard, toffe apple. Apple juice, apple cake, apple smoothies or you can give some to the neighbours.

I don't know how to make apple jelly, but that would be great also. This all goes well for Thanksgiving.

APPLE BROWN BETTY

Serves 6
Inverting this dessert shows off the layers of tart apples.


3 Granny Smith apples, peeled, cored, and sliced 1/4-inch thick

2 tablespoons fresh lemon juice

4 1/2 tablespoons unsalted butter, melted

4 teaspoons granulated sugar

2 cups fresh breadcrumbs

1/4 cup firmly packed light-brown sugar

1 tablespoon all-purpose flour

1/8 teaspoon ground mace

1/2 teaspoon ground cinnamon

1 teaspoon cognac

1. Heat oven to 375°. In a large bowl, toss apples with lemon juice. Brush four 6-ounce ramekins with 1/2 tablespoon melted butter, and sprinkle with the granulated sugar to coat.

2. In a small bowl, combine breadcrumbs with 4 tablespoons melted butter. Add remaining ingredients to apples, and toss. Divide a third of the breadcrumbs among the ramekins. Arrange half the apples over breadcrumbs, and add another third of the crumbs. Repeat with the rest of the apples and breadcrumbs. Press the mixture firmly into the ramekins.

3. Bake for 20 minutes. Raise oven temperature to 450°; continue baking until tops are golden brown and apples are tender, about 15 minutes. Remove from oven; cool for 5 minutes. Run a knife around sides of ramekins, and turn apple betty out onto dessert plates.





APPLE BUTTER

Makes 2 cups



20 applessuch as Empire or Golden Delicious (about 6 1/2 pounds), peeled, cored, and quartered

1 cup apple cider

2 tablespoons Calvados, a French apple brandy (regular brandy can be substituted)

1 large cinnamon stick

1 teaspoon ground ginger

1/2 teaspoon ground cardamom

1/2 teaspoon ground nutmeg

1/4 teaspoon ground mace

1 small pinch of ground cloves

1 cup sugar

2 tablespoons fresh lemon juice

1. Combine apples, apple cider, Calvados, cinnamon, ginger, cardamom, nutmeg, mace, cloves, sugar, and lemon juice in a large heavy-bottomed saucepan. Place mixture over medium-high heat, and cook, stirring often with a large wooden spoon to prevent scorching, until apples are broken down and saucy, about 1 hour. Mash any large pieces of apple with large wooden spoon to help them break down.

2. Reduce heat to medium. Using a rubber spatula, scrape out apple mixture from pan, and transfer to a small saucepan. Continue cooking, stirring occasionally, until apples are completely broken down and butter is very thick and dark, about 2 1/2 hours. Remove from the heat, and let stand to cool. Store in an airtight container for up to 1 month in the refrigerator or 6 months in the freezer.

the obvious apple pie. you can dehydrate them and use in your salads (like raisins) you can eat it in your cereal, with yogurt, with cottage cheese. there is a dish that you make in the oven with apples, chicken and honey. You can make stuffing, you can make a bong (if you smoke) you can juice them to make apple juice. and you can go to the foodnetwork.com and put apple in the search box and see what recipes pop up. hope that helped!
