I'm used to eating bread with olive oil at restaurants and it tastes great to me. However when I try that at home for some reason it doesn't taste the same. I'm not even sure if it's ok to use an olive oil from a bottle without "preparing it" first. Is that what restaurants do? And what type of olive oil do restaurants use?

I prefer to use an extra virgin olive oil that I have infused with herbs. For a "quick" diffusion I use:
1 Cup Extra Virgin Olive Oil
10 cloves of fresh garlic, sliced
1 teaspoon dried Oregano
1 teaspoon dried Basil
15 Black pepper corns
1/4 teaspoon Sea salt

Place all the ingredients into a saucepan and heat over medium low heat for approximately 10 minutes. You do not want to bring this mixture up to a boil AT ALL. It needs to be heated gently. You will smell the herbs releasing their flavors. Allow it to steep until the oil has completely cooled. Pour it through a fine seive to remove all of the herbs and place in a bottle. To serve you can add a bit of fresh cracked pepper for visual interest.

There are many varieties of olive oil as well as qualities. Only extra virgin olive oil is of sufficient quality to be eaten uncooked. When you buy it ensure that it is either organic or with the mark of PDO (protected designation of origin) this ensures the originality and high quality of the product. Olive oil needs no preparation of any kind and should be consumed at room temperature.Try with hot toasted home made bread with a little salt.

well different brands have different tastes.. like virgin, or xtra virgin.. some tastes a little more stronger or bitter than others.. Just try different brands till you find one you like.. Also if you like just dipping bread into it, try this.. Add a garlic clove Plus some Thyme leaves (just a pinch) to the whole bottle of Olive oil... Let it set a day or two, it adds a lot of flavor to the dipping oil... If you like a nice bite to it. add some cayenne pepper flakes..

The best type of olive oil is Extra Virgin Olive Oil. You may serve it plain, or add freshly-minced garlic and fresh or dried herbs to taste.

extra virgin olive oil for me - it is the healthiest
and don't forget to add a few spices - like oregano

Flavored ones work best. if you are near a Williams-Sonoma Olivier oils work best
